My Favorite way to cook Chucks! Also make great burnt ends. I am sure you have tried. Also! you are the first I've seen to use Worcestershire for a binder! I will be stealing that sir!

Haha, she sure is! She is my biggest fan! The gloves were not insulted they were just rubber gloves with cotton liners under them. You can usually get a 5-10 pack of the liners at any hardware store. Thanks so much for watching, and the kind words!
If you're going to braise the meat to done, using the pellet smoker is a waste of pellets. No smoke will penetrate the foil pan -- all you're doing it keeping the meat hot to render out the fat and collagen. You will accomplish exactly the same thing by using your indoor oven at the same temperature . . . but at a lower cost.

Temp would stay the same, and I can’t give you a time. It depends on the doneness you’d like if your burger.

Haven’t had any issues myself with lower temps! I just sent off my controller for a firmware update to get the 10° increments after the 250° set point
