Which of these two is better for a university use (take notes, watching videos, using excel and other stuff)?:
-MBA with 512 of SSD and 8gb of RAM
- MBA with 256 gb of SSD (with the storage issue) and 16 go of RAM
Considering that I would like to keep this MacBook for at least 5-6 years
Storage wise 512 gb would be good. But as you will be using it for basic study purpose you can go with 256 and can putchase a 500gb external ssd which you can keep handy

Yup it’s different but finger smudges are visible you need to clean it frequently.
What are ssd read and write speed? And did you got 256gb?

M2 mai bas 1 NAND chip hai 2 hone chahiye the M1 mai 2 hai jise ki jab tum koi external drive vaproge ek file se dusri file koi chiz bhejne ke liye toh tumari speed M1 se kam hogi. Jab aaple se pucha gaya aisa kyu kiya toh vo bole shortage thi iske Karan. Lakin kuch log bolte hai apple cost cutting kar raha hai

Yes smudges are visible
bhai aisa hai toh mera suggestion yeah hoga- On the older Macs, over time, the space grey colour would chip here and there, especially on the edges, and the aluminium would shine through. I am assuming it will be the same with all the colours available now. Silver is the colour that stands up to wear and tear the best and fingerprints and oily smudges from the palms are the least visible on it.
On a personal note, I like Silver the best, the contrast with the black keyboard and the screen makes it stand out.
