She ripped the shrimps head off with zero hesitation, what a pro! The tempura looked so tasty, and it must have been a cool experience to get to prep it with Chef Shimura.
One important thing wasn't mentioned. At these high-end "kappou" (counter) restaurants, part of the experience is talking to the chef and staff. It's great that Shimura-san speaks English. I went to one in Kyoto and the chef/staff spoke with everyone except me. They tried, but it's just a totally different experience if you can speak Japanese. From what I understood and observed, out of 11 seats, there was one pair was having a business meeting, one pair of friends eating there for the first time, two pairs of "regulars", the chef's daughter and husband/boss/sugardaddy, and myself. The six people were having the time of their life with the chef and staff. The other two pairs were left alone, but I think they wanted to be left alone. They tried to include me into the conversation, but we couldn't get past the common pleasantries. It was still fun. For me, it was like watching a restaurant scene from J-drama.

Great video about tempura. Tempura is a simple dish but extremely difficult to master. Definitely interested in taking Chief Shimura’s class.
