I made this for my family and it is amazing, truly, truly amazing. I left it to marinate for 24 hours. I paired it with fluffy mushed potatoes and a good Syrah wine. Everyone was raving about it. Thank you Genaro and Antonio for giving us this gem of a recipe I will definitely do this again

I followed the recipe to the letter. However, the liquid in my pot never reduced. In fact after 2 hours of cooking on low there was even more liquid them when it started. What did I do wrong?
Im not really sure because im not an expert cook, but perhaps sealing the meat properly might reduce the juices coming out of the meat. Did you use fresh vegetables or frozen? Sometimes When i use frozen vegetables the amount of water doubles. In any case using a bit of wheat flour will thicken the sauce (over here its called maizena). Best wishes and good Luck from Spain!
Your heat was too low. Try a medium-low setting if you want to hit that 2 hr cooking time, or maintain what your heat was at but braise it for 4+ hours.
Does he fry the meat in olive oil? He sears and seals the meat in olive oil, which will improve the flavour, by forming a caramelised crust, which seals the meat. Some people do this, others don’t. However, the result in this case was plain to see. A perfect example of braising, rather than roasting or boiling.
