    Thanks for these recipes! Just so you know, in case you ever need any or want to try making spicy mustard with them, you should be able to find black mustard seeds at any Indian grocery. We use it extremely often in Indian cooking 🙂

    I just finished making the first version, with some alterations. I love heat, so I did 50/50 black white, used very cold water, waited 10 minutes, added salt and white vinager. The aroma is amazing, I took a taste and yes it's a bit bitter, but I would put it on a sandwhich right now. Sealed it up and I'll let it sit a day or two. Can't wait.     Usually honey mustard in the U.S. is 1 part mustard to 1 part mayonnaise to 1 part honey with a splash of vinegar and a dash of cayenne or paprika. So blending the mustard with a few dates, a few soaked cashews, a splash of maple syrup, and some paprika would give it a texture more similar to the non-vegan version. Super delicious!

    Made your mustard lastnight and since it was the first time I have ever made mustard, I went "what the heck". It was runny and wow, oh so bitter, I didn't think that it would change, but it did, thickened and mellowed beautifully. It sat on the bench for a little over 24 hours and it is amazing! Probably the best mustard I've ever had. I will be making my own mustard forever! Thanks Derek :)

    Whole mustard seeds are also great for cooking curries. Toast them in a dry pan till they start popping and then add the rest.

    Tale of Two Mustards.... I tried your recipe with the 3:1 ratio ground up for me and another recipe for my hubby who loves all things hot and spicy with whole yellow, brown and black seeds along with some habeneros. I'm glad I cut back on the brown seeds as you suggested as it's still pretty spicy. It was very runny and very vinegary so I ended up adding another Tbl of yellow seeds and a splash of water. I added a dallop of molasses (it was all I had) to my version and it was really good. This is a first for me, so thank you for getting me started on the mustard journey! I have ordered enough seeds to make LOTS of homemade mustard. We were ordering Lowensenf from Germany at $10/jar to eat with our sourdough rye breadsticks... great mustard but very expensive! I'm looking forward to trying different seasonings and flavors. :-)

    I find these videos so useful and entertaining! It’s also fun learning about the foods and how they’re made. Along with all the sauces I have learned to make from Derek now I hardly ever buy anything pre-made from the store. You start to know everything you are putting into your body and never any additives ❤️

    Great video man! Have you ever tried Silan? It's vegan honey made from dates and it's a traditional food in the middle east. It goes amazing with tahini and pretty much anything else you could think about
