At the foot of Cangshan Mountain in Dali, there are fields of dried ballonflower. It looks like lettuce and we eat it after it's dried. Fresh dried ballonflower has bitter pulp, cut it into long strips, and dry it in the sun to retain its crisp taste and light sweetness. It's a must-have dish when we eat hot pot!

I wish the internet had Smell-O-Vision and I could taste that ballon flower. I've never even heard of this vegetable. So cute when Axia cries at her cousin leaving. Her mischievous and puckish personality hides a sweet heart.
Hey Greg, the vegetable is also called celtuce! :) If you happen to cross an Asian grocery store or an Asian farmers market where you live, you may be able to find it in the spring! It's really interesting. Super savory, crispy, and very refreshing to eat

I had gotten it in powder from Korean heath& beauty store.. it is very bitter.. like Penjie said when she tasted it.. like bitter melons.

Iceberg Lettuce, Gong Vegetable （tribute vegetables for the Royal Family） are all Asteraceae Lactuca, the difference which part be eaten， stems or leaves
Since lettuce was domesticated by the ancient Egyptians more than 6,000 years ago, with the spread of human civilization to all parts of the world, the main edible part of the lettuce bred in the Tang Dynasty in China is the fleshy and plump stem.
The tribute vegetables are slender, bright in color, and crisp in taste, which will not change after being fried. Lettuce stems are short and thick with a crusty surface.

Мама готовила тесто, папа делал фарш, а все сёстры раскатывали тесто, накладывали начинку и соревновались между собой, у кого красивее получится слепить, кто быстрее и больше налепит пельменей.... 还是第一次知道新鲜的贡菜长这样，
剥光后跟莴笋还真的挺像的。
从古代人工栽培开始算，
两千多年后还能在我们今天的餐桌上看到，
充分说明其食用价值之高。
吃起来口感那真的叫做“嘎嘣脆”。
这货就是长板的莴笋

@@jsisw9i9 口感上的确是有点差别，但是还是一样啦，黑毛猪和白条猪都是猪，三黄鸡和白羽鸡也都是鸡的差别
譬如蘿蔔乾是爽脆，鮮蘿蔔煮久了是軟爛。

@@jojokim2000 It is really hard to figure out who is who sometimes. They call everyone sister, brother, auntie, granny etc. Young Ahao is her cousin and Axia is her bio sister. Ahao grew up there due to his parents working away, which is very common in China, so Ahao is like a little brother to them. I also didn't know about the other young man that is going to find a wife.
Actually the younger one is Aháo(阿豪）,the one will go to Sichuan is Ahào(阿皓）, different characters.
You live in such a beautiful place. It's hard work every day, but, should one look around - there's something to live for.
For those interested: this plant is also called stem lettuce or celtuce.
Almost 4 years im watching seen my first acct..the little boy always happy with the food you prepare for him..time fly so past he grown up now.

The crispiness of the veggies remind me a bit of bittergourd. Thinly slice, and stirfry with egg then you get something similar to this veg. I wish we have them here, they look good and i love crispy veggies! The hotpot at the ends look sooo amazing. I'm jealous
