I love that you show the trial and error in these videos. Baking is not always an exact science. Especially when you are making unusually large items. So glad it turned out so well second try. It look gorgeous and intimidating. I had a little smile every time you had to "mash" something.😉😁
Hey @CHEFPKR ! Your creampuff looks quite decent for that size! ;) In most bakerys where i worked, i am a Meister (Master) Baker from germany, we put an empty and cleaned tin can over the pastry. That helps the pastry to become a much higher volume while it is baking. makes it even fluffier and lighter. This way you can also use much less pastry for a faster baking process with the same outcome in volume. :) I am totally aware that in this dimensions you baked here, a tin can or something equal in this size is hard to find. Still, i hope this little tip of mine will help you with later projects or with your pastry skills in general. Sorry for eventually gramma errors, like mentioned i am german. Keep up the nice work you doing! Much love from germany!

I would try to preheat the bowl with boiling water or in a covenction oven to like 180-200°F. that helps with the heat deliverence through the thicker material.@R
