I just made it with some lake trout we caught yesterday, AWESOME! just saw the baking powder/soda part. I'll change it up next time. It was better than any restaurant I just went to. Thanks for the recipe, great video.
Was Raised in the Great Pacific Northwest and we used Ling Cod for our fish n chips also.. never used rice flour need to get some but we'll used corn starch and milk instead of Beer( ya I don't drink anymore and don't feel like buying it) and we'll for sure make that tarter sauce!!
I was also raised in the PNW and we always used halibut. Used to be cheap but so expensive these days. Not really a fan of ling cod but thinking of trying rockfish next time as I do like it cooked other ways.
@ThePdxster Halibut is a good fish! Didn't Ivar's fish n chips use Halibut? We now live in Colorado and it's hard to find the seafood fishes here. We will try Halibut on our next time we have fish n chips, was thinking of making some up while on a camp trip in our mountains!
Hi, I have Louisiana fish fry breading mix and intershell seafoods seafood breading mix, says just dredge and fry, I have but can I use for a beer batter to use it up now saw this? Appreciate it tyvm

Hi,from Ireland here.Leave out the baking powder if using self-raising flour.Cod is usually a big long fish and my fishmonger will cut a steak from the middle which is very thick or from the tail end if I want it thin.Godbless🙏🇨🇮.
The last time I went back east, we stopped for fish and chips. The fish was cod and after I ate a small portion, I threw the remainder in the trash. I only eat haddock fish and chips thank you.

In 99.9999% of all recipes that require flour, assume it’s all purpose flour. If someone has developed a recipe that requires something other than AP flour, trust me when I say they will specify it, such as self-rising flour, bread flour, cake flour, rice flour, semolina flour, etc.
The pickle relish...I love pickles as long as they ain't sweet can't stand seet or bread and butter. But when it comes to relish be it in tarter sauce or most other sauces exceptions aside I can't stand Dill pickle relish but prefer sweet.
It's pronounced Worcester (wuster) sauce forget the "shire" bit! It's an English blended sauce and that's how it's pronounced! By the way your recipes are wicked!

In a pinch cornstarch can be used instead of rice flour. The key is to lower the protein content / gluten content of the batter.

We often double fry in Yorkshire - once at 140c with some extra drizzles of batter till part cooked. Then at 180c to finish.

What beer is it ?
Are you using fresh cod or from frozen? If it's thawed fish, would we still salt and rest or does the freezing process remove the excess water?
