Cara and team, Thanks for hosting Fred Siggins. His eloquence and depth of knowledge on the topic of Australian whisky is quite impressive.
Definitely learned something here. Looking forward to exploring Australian whiskey
Beer, wine now whiskey! Seems like everything that comes out of Australia seems to be great
We’re having a moment!
I was at the new Archie Rose distillery located near port botany and they were telling me it’s the largest independent distillery in the Southern Hemisphere, huge leap for the industry
Absolutely! They're making some serious quantities of whisky there, so only big things to come for Aussie whisky.
If you read this, I have a suggestion for you.... on the subject of Whiskey, perhaps you can do an episode on which brands are best consumed "neat", and which brands are best for various Whiskey cocktails.... such as the Mint Julep, Old Fashioned, Etc. ... the drinks that help the whiskey stand out. THAT is my suggestion!!
That’s a good idea!
@@BehindtheBar Thanks!!
Thank you both so much for this!!! In 2016, I put Sullivans Cove bourbon cask on a "worldly whiskey flight" at Village Whiskey in Philadelphia in the states. However, I did not know enough to appreciate what I was tasting in the juice. Thank you so much for this deep dive and the quality content if I ever the pleasure to wait on you or see you around these parts, you will certainly get a dram on me. cheers
I hope you enjoyed it either way!
Since few of these are available state side, I'll just have to come to Australia when this pandemic is over.
This was a great discussion, thoroughly enjoyed. I am really only beginning my whiskey journey, have been well in to craft beers for quite some time though. Have subbed..
Around 25 to 30 years ago, I used to spend a lot of time in the Lark Distillery in Hobart, my sister worked for Bill Lark, running the cafe there. Met Bill several times, used to buy the Tasmanian Pepperberry Vodka he made and some other liqueurs. This was also at the time a Tasmania artist working upstairs, Peter Barraclough, lovely guy. There was also another lady who lived across the road from Mark 'Chopper' Reid (well at least a property he had). They had Moo Brew beer on tap, made well good use of one night of the Dark Ale, so good coming from the tap, yum! I see in the background in this video New Zealand's Moa beer on tap, shame cant get the here in Hobart anymore, hasnt been sold for quite a few years now.
That’s so cool, you were there at the renaissance of Australian whisky! You should check out our most recent video too:

What a great representation of some truly fantastic Australian whiskies. Every single one of those bottles has the right to call themselves the best in their class. I would also like to mention. About a month ago, a Victorian distillery called Backwoods, also released some red gum whiskies.
Thanks for the experience😁
Dear Cara! Thank you soo much for recording this series! For a lot of northern hemisphere inhabitants it was a fascinating journey. I don't distill things, but home brewed things with Aussie or Kiwi hops are close and dear to my heart :). If only Tasmanian malts were attainable stateside, lol...
I admire your work, how fascinating you make the world of %. And your style adorns your work beautifully!
Thanks for what you do.
-Tomasz
Thank you so much for the kind words Tomasz! Hopefully some Aussie greats make their way stateside soon…
@@BehindtheBar You are fantastically talented and just a beautiful human being! I wish I could meet you sometime... All the best wishes
Dear Cara and whole team, this was so good. Being from the other side of the planet, about everything in this episode was new. Great history and brand walk-through.
A whiskey trail trip in A. and T. Now that's a new trip to dream about.
And hey! How did your cocktail-naming contest go? Any winner yet?
Definitely a few favourites! I’ll have to go through them in a video 😊
I should have mentioned Fred of course, sorry. Your presentation was a treat to listen to.
Thanks for this great video and the previous one. Just researching a wee bit for my next german video about Sullivan Cove and had a blast watching your videos. Thanks for the good work and great content. Tasmania has been on my bucket list for quite a while now. Lots of good thoughts and wished from Germany (although currently hanging out on the northern coast of spain). Cheers
So glad you enjoyed! I hope you’ve seen our other Sullivan’s Cove videos with Miranda who is on their sensory panel:

Just a friendly reminder May 15 World Whiskey day.... Woop Woop can't wait I'll be looking out for some of these bottles to enjoy.. chur chur... 🥃🥃
A dear friend turned me to Australian whiskey, and I was pleasantly surprised. It is very soothing
hello Cara and Behind the Bar Team,
Greetings from Germany!
Wow! I thought I knew everything about Whisky (Scotch/American Whisky, etc.) but apparently not.
Awesome presentation and great info, THANKS for doing what you do. Also for making it so interesting with all the history behind the drinks and different kinds of Liquors.
So glad you enjoyed it pal!
I love checking out these channels. Been in hospitality for over 20 years and still learning new things every day
Damn, this was so cool! New mission is to seek some of these out! Great little series, thanks!
The one 'Thumbs Down' is from someone who doesn't think Fred says 'So now you know' as good as Cara
Haha good on him for trying!
Very good! But you forgot to mention Limeburners!
Malt whiskeys are popping up in the unlikeliest places. Take Arizona, for example. There's a distillery producing malt whiskeys from both smoked and unsmoked barley in Tucson. What's unique about the Del Bac Dorado smoked whiskey is that the barley is smoked with mesquite wood. We're going to have to wait for a whole lot more climate change for Arizona's extensive peat bogs to become a thing, but mesquite is all over the place.
Good things come from Down Under! 😜
This makes me think of Welsh whisky and how underrated it is.
I don’t think I’ve had the pleasure of trying any but I believe the Welsh would make good whisky!
@@BehindtheBar Penderyn is the biggest brand, I believe. They distill in Breacon Beacons. They do single malts, but also gin (Brecon Botanicals), vodka (Five), rum (Siddiqui) and cream liqueur (Merlyn.) Welsh whisky had been a forgotten thing until just about 20 years ago. They do distribute in Australia and the US, as well as France and Taiwan.
So sorry I was playing "responsble" the last time I was down under, but then, it was 25 years ago and whiskey was not the drink of choice. Your beer were lovely, though...
I really appreciate your vlogs because you don't weigh them down with the usual taste expressions. I'm really interested with the whisk(e)y emergence there, too. Your boyfriend(?) definitely knows his business and I appreciate that because it gibes with your whole format. Keep up the great work, very cute Scottish/Australian lady. (That is not derogatory, I fell in love with just sort of lady)...
Looking forward to trying Australian whiskey. Japanese has been my current favorite these days
Really love The Gospel rye. I’ve had both the straight and solera, and both are amazing. And of course Lark and anything from Tassie.
Really looking forward to trying Australian whiskey. These sound like good places to start! 👍
Late to the party , however you're making great stuff..Bellgrove ..Starward, excellent stuff ... and Callington Mill omg ...superb.
Old Hampton is a fantastic small distillery that's been going under the radar. Australian Red Gum cask is quite leaky and the angel share is too high combined with the warmer temperature, so only viable as a mixing ingredient or a finishing touch. Would love to see these distilleries ramp up their production and bring down the price for popular enjoyment.
For sure.
Really enjoyed this chat about whiskey and can’t wait to taste some home grown whiskey
Hi Cara, I realize I forgot to comment this episod & congrat you & your guest for a great survey & cool stories about some recent boutique distilleries I never heard of...Well done ! 👍
Thanks Greg!
Definitely would want to try these Aussie whisky especially "Old Kempton" . Yes you say it better (now you know). 😁😁😉
Haha!
Tell Scott Morrison to let us in, we'll start the aussie whiskey boom
Aussie whiskey is on the up but few distilleries actually offer reasonably priced single malts. Limeburners, Whipper Snapper, Starward, Corowa and Hellyers all seem to have a reasonable asking price for their liquid. Lark, Sullivans Cove, Old Kempton, Lark and Nant most are 500ml and have a price tag that is almost taking the piss. Tasmanian whiskey is great but the price tag doesn't match the product and single malt Scotch seems far more reasonable both in quality and price. I just want reasonable prices for the Tasmanian drops its like they charge a premium for being Australia's highland region and I suppose its gotta cross the Tasman.
Yeah I mean you have to remember the production facilities of most of these are absolutely tiny compared to your big Scottish single malt distilleries so I think everyone just has to decide for themselves where they think their value threshold is!
I’m a fan of The Gospel and Starward, particularly the Two Fold
Great juice!
Proud Tasmanian here!!
Have not seen any of these, but my US state is a control commission state and makers/distributors have to pay the members and staff 'consulting' fees to get on the permitted list.
That must be so frustrating!
Haven't seen any in Europe either. This is getting me to go on the hunt to see if its even out here
HI Cara, right now theres a black bear ripping apart a dead tree down in my back yard. I came inside...found you here, given my choice...I would rather be here with you. : )
😂
Something else to do when I eventually get there. Going to have to be there a month or more now....
i wish I could get some of these
If you go down under, bring a few cases for me ... 😊😊😋😋
I'm a Big fan of Australian Whiskey I love Stewards , Lark and Ned brilliant whiskies
So besides the expensive Sullivan's Cove I have access to Hellyer’s Road. Are either of those worth the money?
I wish I could try oat whisky. I love oat flour.
Being perfectly honest I haven’t loved some of the Hellyer’s Road I’ve tried, but I also know there are some releases which are meant to be great. Probably worth looking at some reviews of the expression you have available to you before committing!
@@BehindtheBar Agree. Their entry level has that off-putting dairy note (Hellyer's Rd is originally a dairy farm) that has kept me away from their higher aged statements, which may be quite good.
Whippersnapper in Perth actually has a product called crazy uncle moonshine
LOL...I'd try that from the name alone! 😂
@@Barprints it’s bloody good too!
I really want to try some aussy whiskey
Do you have the equivalent of the Kentucky Bourbon Trail in Australia. Definitely would consider an Aussie whiskey road adventure
Not as far as I’m aware yet but I’m sure you could do something similar in Tasmania 😃
Yes, there is a Tasmanian whisky trail! Lots of beautiful places and great distilleries to visit. There are also some great distilleries in the Adelaide Hills if you're doing a wine tour up there.
Cara, when will you be able to come
To the State's love your channel!✌️
One day!
@@BehindtheBar well if you ever come to Nashville Tennessee You've got a Friend with deep pockets and I definitely could show you around and I would love to do that you're the best
I am curious about where I can purchase some of the whisky's that he talked about. That being said, Lass you are a Goddess. please keep spreading your knowledge. I have two PhD's. One in World History and One in Applied Mathematics. I have probably learned more from you and your guest than I have learned in all my education. Keep Rolling!!!!!
Are you in Australia? A lot are just available direct from the distillery.
@@BehindtheBar No Ma'am. At this time I am in Texas. However, I do plan on coming to Australia in the near future.
Thank you. Love you and Your Vlog.
Loved both videos, has anyone tried using Red Gum Whiskey barrels to barrel age a Stout?
Look at Kikimora from Bad Shephard!
Very nice informative video
Starward remains one of the best Whiskies in the World. I love the red wine barrel aging!
It’s great value for money, big fan of the Nova red wine cask!
Missed part one? I feel it’s taken a year to get back to Ausie whiskey!
v informative!
No, he doesn’t say it as good as you lol. Yes, I’m sure you do know more about Sherry.
Regarding that craft whiskey smoked with sheep dung, Floki distillery in Iceland does that as well. I came across it at the airport duty free while I was there. Unfortunately I was there on a short layover and not having tried it before, I didn’t think buying a 100USD bottle was a good idea.
It's better priced nowadays im sure; scotches have taken off on a hyperbolic curve.
True!
29 minutes without having a sip?
Haha well spotted, we were talking too much! It was Feb Fast too, although we did have one or two tasters off camera to remind ourselves of course...
*Tassie Whisky! 😉
Haha! The mainland is catching up 😉
Ya, I know...tough choice. but a bear is just a three hundred pound dog with extra claws and it would just as soon eat you as your rotted tree and grubs... I prefer a glimpse of you. Just sayin...
Must be a joke😂
Bourbon>everything else
Haha no comment!
