Tullamore Dew is what got me into whiskey in the first place. It was spring 2010 i think, third year of high school. On a school trip to a sailing school in Sardinia, me and my friend discovered this little hole in the wall close by. Among the drinks there was Tullamore Dew, been one of my favorites ever since.
For the price, I really like the Bushmills Black Bush. It goes for about $30 here in the States. When I want to spend a little more, I go for the Teeling or the Redbreast, both gorgeous whiskies.
I think something that was overlooked in both videos is that Irish whiskey does not have to be aged specially in oak casks, unlike in basically every else. Some of the results like the Teeling “Wonders of Wood” bottlings or the Method and Madness experiments are truly amazing whiskeys and it’s a great way to play a bit more with your spirit
One of my favourite videos so far. Once I saw the Connemara on the Thumbnail I was hooked. Love this whiskey. My first contact with peated whisky was Lagavulin 16 and I loved it. And during the time I was living in Ireland I found Connemara and the rest is history. One of my preferred Irish whiskeys. Thanks for the great video. Cheers!

One interesting thing you touched on is that Irish Whiskey doesn't have to be aged in oak. That isn't the case in the US, Scotland, or Canada which have to use oak. There are good reasons why oak is the standard, but I am excited to see what Irish distillers discover with all the experiments that they are now running. I'm going to look for that Kinahans so thank you for making me aware of it.

I met a barman in a hotel in Italy who put my knowledge of Whisky to shame. (They apparently have formal qualifications in Italy on wines and spirits). I’m catching up thanks to you. So interesting and as a Scot..... a little disappointing but hey.... I’ve yet to meet an Irish person I didn’t like so I’ll take pleasure in searching out one or two of those to taste.
As a Scotch fan, I'm rather taken with the taste of Writer's Tears -- Copper Pot ( a rather "Scotchy" dram, to be sure , and a fine one at that ), and quite enjoy an occasional splash of Kilbeggan... I completely agree with you about how exciting it is to see what new Irish whiskies make it on the marketplace in the coming years. Personally, I'm a big fan of the cask strength Redbreast 12. Flavors of the regular 12 yr bumped up to "11".

Wow! Throwing down the Redbreast 15yr! Good for you! I’ve always considered the 12 to be the quintessential Irish pot still. Currently working through a bottle of Yellow Spot and a West Cork 8yr small batch. If you ever get the opportunity, try Dingle whiskey; very small distillery in, you guessed it, Dingle. They were the first new distillery to open in Ireland back in 2012. Unfortunately, due to their limited production, they’re the Pappy of Irish whiskey.
I've been waiting for this video, love it. I lean on the Irish side of whiskeys, bought a bottle of Redbreast and loved it, maybe a little too much judging by how little of the bottle was left the next time i went to have some lol. Love your work.
Thanks for the education! I never knew much about Irish whiskey or what makes it distinct (and I *still* don't know that about Canadian whiskey). I recently got a bottle of Irish whiskey for St. Patricks called The Sexton that is matured in sherry casks. It's a curiously inexpensive single malt. I definitely notice those green apple notes you mentioned on the nose, it was the first thing I thought of when I uncorked it. In the mouth it has a kind of honey quality to the malt that combines with the apple to make like a ripe stewed pear taste. Definitely on the sweet side, but it dries out just a little on the finish. Very easy to drink.
Loved the vid! One of my recent favourites out of Ireland is Roe & Co blended whiskey originally got it to sip neat because it was on offer, great for siping but turns out also amazing in cocktails! I make an old fashioned with it which is: 60ml Roe & Co 10ml Demerara 2:1 syrup 2 Dashes of Angostura bitters 1 Dash Bitter Truth Aromatic Bitters I usually build it in the glass directly with a large cube of ice, zest an orange peel and it’s this winter’s favourite for me, got the idea of mixing Ango & Bitter Truth bitters from the Death & Co Old Fashioned! Also makes a great Gold Rush at a 2:1:1 ratio Roe & Co, Honey Syrup & Lemon, over ice with a twist of lemon! Definitely a whiskey worth playing around with!

I was visiting a friend (happens to be president of an irish whiskey club) and got a wonderful evening of trying things from redbreast up to Midleton very rare pot still. Quite the fan of Tully when in comes to Irish. Their main whiskey is, similar to a Jameson, a smooth and easy-going whiskey, but they‘ve also produced some rather interesting new ones in the past few years :)
I vote for The Dew. (And I'm quite surprised that she isn't pushing Scotch whiskeys) I expect seeing this person leading an Edinburgh lecture class pretty soon.
I really like Redbreast Lustau for kinda special occasions. Another Irish whiskey that I found in a little mom and pop liqour store is Lambay which is very light and sweet
Bushmills is nice for drinking neat or on the rocks. And Paddy is good for Irish coffee. Irish coffee has long been the only (sort of) cocktail i've known that requires Irish whisky rather than from another country. Maybe an idea to do some coffee cocktails?
I've got Redbreast 15 and 12 Cask Strength, Connemara, Jameson Lively and Bold. Definitely nice chill out whiskeys. Over the lock down, did do an zoom tasting for Teelings, they have some really interesting things coming out, including a New Zealand exclusive... Just need to convince the hubby to expand the shelf first...
Might try going ahead and buy them, him seeing them setting around the kitchen might inspire him to go ahead and get it done, make sure a couple of his favorites are mixed in with them, good luck!

Irish, unfortunately, is a region of whiskey I often overlook, but whenever I do drink it, I'm always happy! The Sexton and Redbreast (12 & 15, haven't had the others) are my 2 favorites, but I really need to try a lot more!
Bushmill's 10YO Single Malt is the only Irish whiskey that makes my lineup regularly - I'll definitely have to look into whether Teeling's or Redbreast is available around, those sound fascinating to try, as to Tullamore/Jameson's I find it fine as a sipper when I want something rather cheap and simple, but 9 times out of 10 I'll reach for a bourbon/rye for a cocktail or a glenfiddich 12/Tallisker 10/Bushmill's 10 to sip.
Roe & Co is delicious. Its a typical Irish whiskey flavour (I can't remember the grains, distillation or blend right now) but finished in bourbon barrels. It's smooth like Jameson on the tongue but you get a lovely smokey, sweet bourbon finish. Well worth checking out.
I cut my teeth on Knappogue Castle whiskey, and it's all been downhill from there. I attribute it to my fondness for bold flavors in my whiskey -- flavors that stick with you all night and into the next morning. Sadly, I haven't had it in a long time.
I highly recommend the Jameson Triple Triple. It's a duty free only. I tasted courtesy of a dear friend. I believe it was only like $40? It's finished in 3 different casks giving it a very fruity but not overly sweet body. It does a great job at stripping away much of the metallic vanilla flavor i generally get in Jameson. It may also be worth having a video exclusively on single pot still... mentioning the specific legal parameters for it. It has to be 30% or more of both malted and unmalted barley and can have 5% grain in the mash bill. Another great and quite unique blended irish is writers tears. its a mix of malt and pot only. it has no grain spirit. to my understanding, prewar days when irish whiskey was all the rage, that was the common style for blended, leaving 4 functional categories in ireland- blended, pot, grain, and malt. i'd love to hear more about rye and poitin as well.
Hi, I’m Irish and into cocktail making. Have loved these last two videos btw ❤️ A lot of cocktails call for bourbon for its sweetness or rye for its spice. Can you recommend some Irish whiskeys that would be sweeter like a bourbon and spicier like a rye that I could substitute in these recipes and still be able to support my local Irish whiskeys? Of course I know I could use any whiskey and create a new taste with it but which ones would be good to use if I didn’t want to sway too far away from what the traditional cocktails would call for. Without just buying them all and trying them because that’s expensive 🤣 Thanks
Haha fair enough pal! As I mentioned here, Kilbeggan have a high rye content whiskey out that might be worth searching out for your spice factor, and the Teelings Single Grain is majority corn like bourbon so both good options 😊

I really like Slane for a mellow, cheap option. I've also been drinking Roe & Co. and West Cork, which are pretty nice.

Irish, unfortunately, is a region of whiskey I often overlook, but whenever I do drink it, I'm always happy! The Sexton and Redbreast (12 & 15, haven't had the others) are my 2 favorites, but I really need to try a lot more!

Connemara is my favorite, but I also like Islay scotches and mezcal, so it's not too surprising. I just love smoky flavors.
Ooh, I love Bushmills Black Bush, my favourite.
Jameson is what I call a "friendly" whiskey.

Bushmill's 10YO Single Malt is the only Irish whiskey that makes my lineup regularly - I'll definitely have to look into whether Teeling's or Redbreast is available around, those sound fascinating to try, as to Tullamore/Jameson's I find it fine as a sipper when I want something rather cheap and simple, but 9 times out of 10 I'll reach for a bourbon/rye for a cocktail or a glenfiddich 12/Tallisker 10/Bushmill's 10 to sip.

I’ve only tried Jameson’s and Tullamore, of which I prefer Tullamore. I should probably give some of the others a try, as my wife is Irish!
Black Bush is one of my favourite cheap mass production whiskeys

Roe & Co is delicious. Its a typical Irish whiskey flavour (I can't remember the grains, distillation or blend right now) but finished in bourbon barrels. It's smooth like Jameson on the tongue but you get a lovely smokey, sweet bourbon finish. Well worth checking out.
That’s the Diageo one I mentioned! Tasty stuff.
I cut my teeth on Knappogue Castle whiskey, and it's all been downhill from there. I attribute it to my fondness for bold flavors in my whiskey -- flavors that stick with you all night and into the next morning. Sadly, I haven't had it in a long time.
I highly recommend the Jameson Triple Triple. It's a duty free only. I tasted courtesy of a dear friend. I believe it was only like $40? It's finished in 3 different casks giving it a very fruity but not overly sweet body. It does a great job at stripping away much of the metallic vanilla flavor i generally get in Jameson. It may also be worth having a video exclusively on single pot still... mentioning the specific legal parameters for it. It has to be 30% or more of both malted and unmalted barley and can have 5% grain in the mash bill. Another great and quite unique blended irish is writers tears. its a mix of malt and pot only. it has no grain spirit. to my understanding, prewar days when irish whiskey was all the rage, that was the common style for blended, leaving 4 functional categories in ireland- blended, pot, grain, and malt. i'd love to hear more about rye and poitin as well.

A lot of cocktails call for bourbon for its sweetness or rye for its spice. Can you recommend some Irish whiskeys that would be sweeter like a bourbon and spicier like a rye that I could substitute in these recipes and still be able to support my local Irish whiskeys?
Of course I know I could use any whiskey and create a new taste with it but which ones would be good to use if I didn’t want to sway too far away from what the traditional cocktails would call for. Without just buying them all and trying them because that’s expensive 🤣

Haha fair enough pal! As I mentioned here, Kilbeggan have a high rye content whiskey out that might be worth searching out for your spice factor, and the Teelings Single Grain is majority corn like bourbon so both good options 😊

Hmm I honestly haven’t played around with it too much in cocktails but I imagine it would substitute for Genever. Maybe try a Tom Collins style drink?

Will be a video about unsual whiskey something like Scotish Bowmore 15 YO Sherry Cask Finish? Is there a possibilities that I can make a drink with that kinda whiskey? PS. I drinked Bowmore and I must say that it's do magical flawour. Every one must try it☺️
