  • Here’s how we cook a 30 Gal Louisiana Jambalaya.
    This video gives you the basic steps on cooking a 30GAL 45lbs of rice Jambalaya.
    1. Brown Sausage 20lbs (we use smoked)
    2. Brown & season 15lbs boneless chicken thighs.
    3. Brown & season 30lbs of pork.
    4. Brown 25lbs of chopped onions, two stalks of celery, 8 oz garlic & 5 Bell peppers.
    5. Add Sausage and Pork back into pot. Add your water and season to your liking. Remember 2 water to 1 rice.
    (45lbs of rice we used 12gals of water)
    6. Bring to a boil Add your chicken then add your rice.
    7. Use a paddle to scrape the bottom of the pot and push the jambalaya. Keep repeating every 10 minutes till Rice is cooked.

    Real jambalaya cooks where I'm from don't use par boiled rice. I've cooked for 1200 already using Mahatma extra long grain rice. My normal cooking is for 150.

    I see someone asked below; but y'all didn't answer.. Where did you get the extra large Stainless Steel Wok Skimmer (perforated spoon)??? Help us out here! 🙂

      You dont use a roux in proper jambalaya.

    I’m trying to make sure liquid to rice ratio is right for my cook. You say 1 rice to 2 water but adding 48 oz of stock doesn’t throw it off?

    Putting powder crap and liquid "seasoning" in your meal does definitely NOT make it "authentic" .

    I need this setup for our youth group fundraisers at church! Our Pastor is originally from Pearl River, LA, but over here in San Antonio, TX I'm not sure he's found good jambalaya.....I wasn't able to find this setup on y'alls website. Any clues where I need to go to purchase this cookin' rig? Agri Supply has the pot, stand, and lid, but I don't know what burner to use....

    could you please tell me where i can get one of those strainer spoons yall used to remove the meat out of your pot my wife and i just bought our 1st jambalaya pot from krazy kajun its a 10 gallon pot and were trying to get all the proper tools to make jambalaya anf boudin the easiest way pisdible and that strainer spoon would be really usefull for us. thank you for your time.
