    I'm looking videos of how to make Jambalaya since a month. After all of this videos I think, that I now understoud the soul of the dish and will cook it in new years eve. Greetings from Thuringia in Germany to US. Special thanks to Louisiana for cajun cusine.

      Hi Brad, I really appreciate your offer with the seasoning, but I'm sure, that the effort to send IT to Germany ist simple to high.
      My seasoning shelf is well equiped.
      Best regards from one of the chefs of the 1. German Grill and BBQ School.

      This is the way how I learn. Understanding the soul of a dish.
      You was just one element. But you helped me a lot. Simple dishes like jambalaya are often overloaded with "great ideas".
      Thanks for teaching.

    Fell in love with cajun food while on the road for 5 years, never crossed LA without stopping for at least boudin. What size pot is that?

    what meat can be cooked down to get the grease if you can't get your hands on hog lard? I find when i just use bacon i can't make enough grease to fry the meat. I thought about buying fresh green onion or cajun sausage out of the casing to make grease. What you think?

      You probably need about 3lbs of bacon to get the grease you need. The only thing it would probably be a little pricey

      @@bradsimon5846 You think 3lbs. of bacon would be good for 15lbs of meat? (5 ea. chicken, pork, sausage)

      @@jodydinger6545 yep! After you fry your bacon down fry your sausage down first and that'll give you a little more grease to fry your meat down

    Love the videos, you just need to get a lapel microphone so that your voice is clearer and we can hear that cajun accent better.

    Question? Where did you get the 30% rule from?

    • @bradsimon5846
      @bradsimon5846  12 днів тому +1

      Hey Jaz! Thanks for watching! The 30% ratio comes from some older guys that been cooking jambalaya for a long time. It comes out meaty.
