      As a vegetarian I'd like to know some traditional alternatives to the oyster sauce. It is used in a good part of the Chinese recipes i see on the web!

      SeeEmm eggs are vegetarian. Not vegan though.

    How can we produce "wok hay" at home? Or is it impossible because the home stove can not get hot enough?

      buy a 'big kahoona' burner and cook outside [or if you don't mind smelling 'chinese' you can do it inside too :)]

    I miss, Siu doing the Cooking. I guess he retired or something.. He should do some more cooking at a studio with his magic wok and fire.

      Doing the same job for 30 or 35 years takes a toll on the body. He deserves his retirement, and it's not like he left us high and dry if he did, we can watch all his videos that is here for life.

    Andy, you MUST have a very hot wok to keep the noodles from sticking. Also if they are too wet/moist they will stick. Good luck
