If you want a crispy crust pizza in an oven cook it on a pizza pan and rotate the pan on occasion, once the pizza dough can spin on the pan slide it off onto the oven rack and let it finish to the crispiness you desire. You could have stretched and build the pizza on the pizza paddle. One other tip I can give you once the dough is stretched out and before you throw the sauce and toppings on press your fingernails into the dough all around making small indentation. I used to make them for a living.

With Ooni you want to set it up so that the wind is blowing from back to front, that way you'll get more heat into the stone. Your base may have been a bit soggy as a result (can tell by the smoke coming out of the hopper).
A trick to some really creamy dough (pizza base), knead butter into the dough & use a little bit of cream into the mixture too. You'll need to prepare the dough earlier. But it makes the base more filling & creamy too, so for pizzas with garlic-tomato, anchovies, mushrooms, ham & creamy cheese topping.... Makes a pizza VERY DELICIOUS.
Little by little, Lucy is gaining some Caleb like chutzpah. She's now more natural in her videos, and isn't afraid to smile a bit. I love how she's letting her inner girlish charm come out, like waving that pizza tray like a weapon. I can feel like I'm having a weird crush for her too.
The work on the dough is actually pretty close to how it is done in Italy. My girlfriend says that to avoid the pizza to get the crispy part underneath you have to use less tomato and drain the mozzarella, you basically have to avoid the dough to get too wet. As side note if you do not mind, the “j” in ‘nduja is pronounced like your “e”.
that's exactly how i stretch out my pizza dough! they never come out round, but, i prefer weird shaped pizza that i make over the "perfect" looking pizza.

If you like a spicy pizza, I highly recommend making one with Arrabbiatta sauce (it's a tomato sauce made with red chilis in it). It's quite god and been my go too tomato sauce for pizza, lasagna, meatball subs and pretty much any dish I want a tomato sauce for.

Dominos is obsessed with putting sauces all over it's pizzas (at least at my local one in Australia), apart from standard tomato or barbeque sauce bases nobody wants sauce drizzled all over thier pizza toppings, thats my issue with dominos pizzas.
@Paul Fellows Good point and I totally agree, Id rather have a private pizzeria pizza than a dominos one, I would say id rather have pizza hut but to be honest I cant remember the last time I had one of thiers and my area only has dominos so I dont have pizza hut as an option so the choice to have a local pizzeria instead is easy for me.

Cool looking oven, what was with that 'other' oven that was there? I love doing pizzas in my home oven with a ready-made supermarket base, last one was fetta cheese, homegrown pumpkin, olives & capsicum - I LOVE cheese by the way 😉
Don't feel bad my best pizzas are semi rectangular at best 😆, I don't have a wood fired pizza oven, just an electric pizza oven, but maybe my pellet grill/smoker would do 🤔 maybe experiment time (otherwise known as wasting nice ingredients and grill pellets several times) 👍

I have a special pizza pan I won as a kid(aka far too long ago) that has holes all across it. Makes the crust nice and crispy.
Roll pizza dough into a ball place onto lightly floured surface, use a rolling pin to roll out dough..job done

Tip: roll out your pizza dough first, then stick into freezer so it'll stiffen up.
