I never freeze my fish before I filet them. In fact, I always do it at the river/lake/dock by necessity. I live in Alaska having fish guts in your garbage can attracts bears. I can fillet a salmon in about a minute and a half. So no use in procrastinating. As a kid, I use to go down to the Kenai river and fillet salmon for fishermen while my cousin vacuum packed them. Made a good money from it.
