  • “Mind of a Chef Techniques with Magnus Nilsson” is a video series that highlights the techniques and tastes of the world-renowned Swedish chef.
For this recipe, inspired by Japanese teas made from toasted grains, the barley is toasted right before brewing. This helps bring out the flavor of the freshly caramelized starch in the barley.

This is Bori Cha- Korean barley tea. If you like it you should try Oksusu Cha- Corn tea.

Can I just ask, do you use fresh barley, or do you have to get some that's been dehusked (pot or pearl barley)? I know the husk is inedible to people, but I didn't know if it was different being brewed. X

Use a whole grain. This works really well with buckwheat as well. You can mix in a nice green tea leaf to compliment it too.

@Kevin Tiedemann just look around, the husk is widely known to be inedible.

Whole grain, hulled (and roasted, so not just from fresh harvest)
