  • Growing up on a farm in Jämtland, Sweden, Magnus Nilsson and his family learned how to make this regional flatbread, a recipe passed down from generation to generation.

    Using flour instead of a towel or plastic wrap to cover the dough while it's rising is a good trick. Magnus rules.

    This together with pickled herring and potatoes are one of my favourite simple foods to eat. Never made the bread myself though so was very cool to see the process of how they used to make it!

    So most of my life, we've had the rolling pins for this in my house. I've just now learned their use, we've kept them after finding them on the side of the road like "maybe one day we will knkw their hse" xD

    My mother had a bakstuga/baking house in Jämtland and we often baked in an electric stove but she never made flatbread after she left that house. I guess it is quite impossible in a normal stove? Where can I buy such a bread brush / tunnbrödsborste?
