    Ingredients:
    - Mutton: 700g
    - Shan pulao masala: 2 tbsp
    - Ginger garlic paste: 1 tbsp
    - Salt: to taste
    - Ghee: 1 tbsp
    - Oil: 1/4 cup
    - Onions: 2 medium
    - Whole spices
    - Green chili paste: 1 tbsp
    - Yogurt: 3/4 cup
    - Stock (meat yakhni): 4.5 cups
    - Rice: 3 cups (soaked for 30 mins)
    - Lemon juice: 2 tbsp
    Process:
    1. In a pot, add meat and 1.5L of water.
    2. Bring it to a boil and remove the scum.
    3. Add ginger garlic paste, 1 tbsp Shan pulao masala, and 1 tsp salt. Cook until the meat is 80% tender.
    4. In another pot, add ghee, oil, and onions. Brown the onions and set half aside for later use.
    5. In the remaining onions, add some water and cover for one minute.
    6. Add whole spices, cooked meat, and green chili paste. Fry for 4-5 minutes.
    7. Add yogurt and cook until the mixture dries out and the oil separates.
    8. Add the remaining pulao masala and salt.
    9. Add 4.5 cups of stock (meat yakhni).
    10. Bring to a boil, then add soaked rice and lemon juice.
    11. Cover and cook for 15-20 minutes, stirring once in between.
    12. Add browned onions and put on dum (slow steam) for 15 minutes.
    13. Serve hot with Raita or Tomato Chutney and enjoy.
