Recipe Ingredients:
- Smoked Turkey Thigh
- 2 tsp Olive Oil
- 2 tsp Butter
- 2 tsp Mayonnaise
- 1 tsp Dijon Mustard
- 1 Small Avocado
- 1 Large Egg
- Black Pepper to Taste
- Chives for Garnish
Instructions:
1. Slice the turkey thigh (or any meat of your choice) into thin slices. Add ~2tsp of oil on a medium high heat pan and cook up the meat. Once its cooked, turn off the heat and leave on the side.
2. Place a slice of bread in a toaster oven at 230C degree and toast it for around 10 mins. You can use a regular toaster or heat up the bread on a hot pan.
3. Take your toast our of the toaster over, spread some butter on top.
4. Make your sauce: We mixed together mayonnaise, Dijon mustard and pepper to create our homemade sauce. Spread your sauce on top of your toast.
4. Slice and lay your avocado. You can also mush it to make guacamole instead.
5. Add your cooked turkey meat on top. Fry up an egg and lay that on top of the turkey meat. Garnish with some green onions. If you have more sauce you can drizzle some on top as well.
