In Zambia we call ugali.ubwali ,also use maize flour but we first bring the water to a warm temperature then make a thick porridge which we then let it boil for 15 mins and then put more flour and cook by turning the cooking stick until it's done.

We in the Caribbean have a similar meal cooked with corn meal ( corm/maize flour). Its English name is corn coo coo or just coo coo. Some islands use another name for it. For comparison, check youtube on "how to cook corn coo coo".
