In my culture (I'm from the Caribbean, but live in U.S), when we peel green bananas, we scrape the bananas after peeling them to remove some of that residual stain, or whatever that excess coating is below the skin.

One last comment, Everline. I think how you guys season meats is very unique. You add your seasonings while the food is cooking, whereas we clean and wash the meats then add our seasonings prior to cooking because we want our seasonings to marinate into the meats, so that there's no fresh scent (animal smell) emanating from the meat when were eating it. We let the meat sit and marinate for some time before we cook it. I suppose every culture is different. I think most Americans cook their meats like you guys do, but Caribbean folks season first before cooking.
