INGREDIENTS:
🔹 8 ounces dry pasta I used Toscani-shaped pasta
🔹 Kosher salt
🔹 ⅓ cup Extra virgin olive
🔹 1 tablespoon butter
🔹 2 shallots minced
🔹 5 garlic cloves minced
🔹 8 ounces Baby Bella Mushrooms sliced
🔹 8 ounces white mushrooms sliced
🔹 8 ounces portabella mushrooms roughly chopped
🔹 black pepper
🔹 1 teaspoon dry rosemary
🔹 3 tablespoons of tomato paste
🔹 ¼ cup merlot wine
🔹 ½ cup of grated Parmesan
🔹 ½ cup packed parsley
🔹 ⅓ cup chopped walnuts
🔹 Red pepper flakes to taste optional

Just made this with pasta "shells" and chopped pecans. Very good "mouth feel" warm and satisfying. Thanks again for another tasty dish.

PS: I don't know if you know an Italian proverb about Pasta that says (translated) .... "It is the sauce that waits for the pasta and NOT the pasta that waits for the sauce". In the sense that the Pasta should not be cooked and then set aside and then finished preparing the sauce, but on the contrary ! This proverb could help everyone a little. :)

Substitute the pasta with chickpeas and thayd a fire ass healthy meal.
Cannot consume wine substitute pls.
Just use beef broth or veg broth
What kind of pasta is that?
That’s Campanelle or Gigli ‘little bell’ or ‘bellflowers’. A common brand for them would be Barilla, though there are a few organic brands out there. It’s a good one for use with sauces. I use it for pasta salad too.

Those mushrooms are all the same species and taste really similar. Also the calories theory of obesity is being debunked in favour of a insulin release model. In this context, the butter is fine. The pasta is not.
Can i keep it alcohol free?
Sure! You can use red wine vinegar or non alcoholic wine!
Baby Bellas, Portabellas, and white buttons are all actually the same species of mushroom. My least favorite as well. Sub in some oysters, shitake, maitake, morels, pretty much any other mushrooms and it will be WAY better.
Tom paste and redwine are good adds for umami but the mushrooms listed above pack way more umami than both of those.
