I have roasted pretty good coffee in an air fryer. The primary reason why the Phillips doesn't do well is because it doesn't get hot enough to hit a high enough temp above first crack. I recommend using a ninja air fryer where you can use the max crisp mode that goes to 240 degrees. I also recommend putting a mesh colander into the air fryer to hold the coffee and pull out the basket every 15 to 30s to shake the beans briefly before putting it back. An infrared temp gun also helps to monitor the temperature. My roasted tend to be done in 4:30min.
or go with an air roaster that is designed for roasting coffee. The Freshroast 540 is a good one. It lets you control the heat and the fan speed, and also displays the temperature. I used a hot air popcorn popper for a few years but being able to see the temperature and being able to control fan speed and heating element is a huge step up.
And if you come to think about it, when James says "it's not bad" it's the equivalent of us, normal human beings, going "it's coffee alright" before sending it down the throat 😂
£20 popcorn popper hacked the thermostat to a 250c one though as the roasts stalled on the original one, very fast roast 100g in 6 minutes but it tasted fantastic, got the bug and now have a gene cafe and a Mago maga for fun experiments, its as much of a rabbit hole as espresso.
I contemplated trying to roast coffee in our air fryer at home, in the interest of science, a year or two ago. My partner has asserted in no uncertain terms that I'm not allowed to, in case it ruins it, so. Thank you for your service so I don't have to I guess
I used to roast my coffee in a rotating basket that came with my air roaster. Took around 12 minutes on the highest temp. I would say it was about a medium roast. Then I'd pour it into a bowl shaped sieve and take it outside to cool seperate the chaff. Finally I'd spread it out onto a room temp baking sheet.
I have roasted coffee in my air-frier for years. It has a rotating drum you can use to roast beans. My problem was that bigger batches (~250 grams) were uneven until I realised that if I introduced big metal bolts into the drum, they spread the heat evenly, so that way I could do them quite well. I did it for years until I could no longer find a cheap enough source of green beans and I found (at least somewhat) freshly roasted beans for a reasonable price locally.
Asking him to make his own ghee is a bit of a stretch given the fun and less scientific lean of the objective of the video. He really should've though ;-;
I have an airfryer that isn't a basket airfryer. It is basically a small convection oven (which is really all an airfryer is anyway!) My airfryer has a rotary basket (meant for things like fries or veggies that you want to agitate while roasting). You should try this again with one of those. We got ours at Costco in Vermont (even though we live in Montreal, Canada). But it may work!
I would like to think that this would be a good option. If you have a rotary basket and the basket, or fryer, is tilted so the beans could agitate while frying, that would surely be a better option than a static fryer. It should allow the beans to roast more evenly. James can comment on this. I have some green Limu beans from Ethiopia that I wanted to roast but never got round to. I might try some in the airfryer and shake the whole thing around a bit to get a more even roast. Otherwise I'll make a fire and use an old coffee tin with holes poked in it.
That fan noise robbed us of a great Schwarzenegger impression soundbite for future Hames videos, but as I continue to watch, I'm starting to suspect that this is already a Hames video in disguise. Expecting him to wish me a beefy day at the end.

Grape seed and sunflower seed oils are both neutral oils with high flash points. Would be nice to try those, too. Agitation would seem to be the critical missing point, so there's got to be a way to adapt an external agitation mechanism, like a magnetic stir bar to achieve that! I mean, we've gone beyond absurd to the sublime, so, "DO YOU NOT CARE ABOUT FLAVOR?!?"
Strap the air frier to one of those vibration plates some workout people use. Sure it might vibrate the frier to death, but I think we've accepted that going in...

I remember an old Air Fryer model with a donut-shaped basket. The basket would spin, and there was some kind of spatula attached to the main body that continually mixed the food inside. After a quick search, I believe it was from the brand Tefal, and it seems like they’re still in business. It would be fun to experiment with roasting coffee in one of those

I began roasting coffee in an air fryer. There are definitely some techniques to make better coffee in an air fryer. One of those is to use one loose layer of coffee in the frying chamber. Another is to very lightly oil the coffee before roasting with a quality unflavored cooking oil - it keeps it from burning the outside of the coffee seeds. I see now that James is trying that.
I also gradually increased the temp throughout the roast and usually got to a light medium roast in 7-8 minutes depending on how aggressively I increased the heat. It was able to make some quite nice tasting coffee. Still not as good and consistent as a pro roaster on a pro machine.

Just wanna say as someone with misophonia, you're a godsend for having the extra audio track without the slurp sounds. I've been partially successful with roasting in an air fryer. I have a Galanz 0.9 Cu ft Air Fry Countertop Microwave. While there is no mixture of the beans, the tray does rotate. I was successful with raw beans from Mexico. 4 divisions of 5 minutes of fry time. The first 2 was set at 400 F. The last 2 was set at 350 F. Between each division I took the tray out to mix the beans around and get some of the chaff out. Surprisingly successful. I roasted a whole pound of Mexican raw coffee over the course of a few months. After I ran out of the Mexican raw coffee I bought raw coffee from Guatemala. The first batch was not good. The second batch was also not good. Gave the rest of those raw beans to a friend of mine and I haven't tried to roast since lol.
This really confirms my past attempts 2-3 years ago. The espressos came out mute and uninspiring in flavour, even a pleb like me picked up on it. Doesn't matter if it's cranked up to max temp, the coffee gets baked regardless rather than roasted. It was a regretful time. A heat gun, a stainless steel pot and a small fan is much more viable as a method and is loads more consistent. It gets smokey though keep in mind.
@elongated_muskrat_is_my_name I direct the heat gun itself which I dip into the beans while stirring around to infuse the batch with hot air, then I pull it out again to continue blowing from a distance. I use the fan to immediately cool down the coffee in a sieve afterwards so they don't continue to roast.
Civilization has fallen, and James wants his coffee! How does he do it? He finds an old cast iron frying pan to roast his beans over an open fire in beef tallow, then grinds the beans to powder between 2 rocks. Lastly, with the powder in a pouch made of old t-shirt, he dips the powdered beans in a pot of water just off the boil, for a coffee infused drink.
Would have preferred that he roasted the coffee beans in a rotisserie cage which moves the beans while it air fries. Makes the best consistency results and after it does roast, you can take it out and shake the husks outside to get rid of them. Been doing that which is a great upgrade from using the stovetop.
The range of emotions on James' face, the "this is my life now" vibe, literal perfection. Also, for the Americans in the audience: 190C is just about 375F.

I have an air fryer that looks more like a small oven, it has a rotisserie in it (which I have no use for) but it could provide a constant rotation to the beans!

Tell the coffee nerds what machines to get if they do want a half decent chance of home roasting coffee. Super episode sir. I have this "President's Choice Dark Roast" whole bean coffee I buy, only now. In Ontario, Canada. It turns out it's 1:1:1 of Indonesian Sumatran Mandheling, Kenyan Ethiopian beans, dark roast each. So I buy $15/lb green beans of each. I dry roast each bean type by itself in a cast iron skillet, stirring continuously by hand, to dark roast (about 30 mins each time). WRT to James' video, yeah it's a huge amount of work to roast your beans to your prefered level. In the end my best ratio was 1:2:1, in the order of bean above. You try.
I only roast unroasted seasames or pine nuts on a frying pan. They can be stirred while being heated. The same logic applies for tumble dryer. Clothes are dryed while they are spinned in the drum.
You can get good results with a simple and cheap home popcorn making machine. Depending on the model you will be able to fry about 30-50 grams of raw coffee in one go. Airflow in the popcorn maker mixes coffee while frying so it's easy to get even roast on the beans if the quantity is small.
This is basically how my dad roasts coffee, except he uses a modified breadmaker with a stainless mixing bowl, he puts a convection oven lid on top and lets it roast. He then uses two sivs and pours the beans back and forth to cool them and remove chaff.
I'm in the process of roasting the seeds of dates and making coffee out of them, I'm encouraging you to try it, it's quite nice actually! I was doing it in the oven and after seeing this I think I'll try the air fryer

The ghee you're using has an estery flavouring in it: ethyl butyrate, which is probably why it's buttery in a way you're not okay with.

I have an air fryer that looks more like a small oven, it has a rotisserie in it (which I have no use for) but it could provide a constant rotation to the beans!
Okay but for the sheer meme of it I think you have to try bacon roasted coffee. I love how James is trying to restrain coffee nerds from doing their own roasting. Tell the coffee nerds what machines to get if they do want a half decent chance of home roasting coffee. I know we're talking about a percent of a percent of people that would actually buy such products but I love your channel and I didn't like coffee until I wanted your channel.
I started with a popcorn maker, it produced a pretty decent result for first timer and its cheap, it looks like a better choice than air fryer

I have a rotating basket in my air fryer. Now I need to get some green coffee and need to try it because this idea will live in my head forever.

Super episode sir. I have this "President's Choice Dark Roast" whole bean coffee I buy, only now. In Ontario, Canada. It turns out it's 1:1:1 of Indonesian Sumatran Mandheling, Kenyan
Ethiopian beans, dark roast each. So I buy $15/lb green beans of each. I dry roast each bean type by itself in a cast iron skillet, stirring continuously by hand, to dark roast (about 30 mins each time). WRT to James' video, yeah it's a huge amount of work to roast your beans to your prefered level. In the end my best ratio was 1:2:1, in the order of bean above. You try.

I only roast unroasted seasames or pine nuts on a frying pan. They can be stirred while being heated.
The same logic applies for tumble dryer. Clothes are dryed while they are spinned in the drum.

You can get good results with a simple and cheap home popcorn making machine. Depending on the model you will be able to fry about 30-50 grams of raw coffee in one go. Airflow in the popcorn maker mixes coffee while frying so it's easy to get even roast on the beans if the quantity is small.
Here's an appreciation post for one of those that really twist at the sound of slurping and other mouth sounds - I appreciate that audio track a lot!

This is basically how my dad roasts coffee, except he uses a modified breadmaker with a stainless mixing bowl, he puts a convection oven lid on top and lets it roast.
He then uses two sivs and pours the beans back and forth to cool them and remove chaff.
I was going to try this because I want to start roasting my own beans. I’m glad I watched your video first!

I'm in the process of roasting the seeds of dates and making coffee out of them, I'm encouraging you to try it, it's quite nice actually! I was doing it in the oven and after seeing this I think I'll try the air fryer
There is a roaster just down the river from my work. Occasionally when I am leaving, I smell and aroma that reminds me of burnt popcorn, but not in an unpleasant way.
