@@damien1781 Mac and Cheese might be considered Urban to us but it is historically a French dish made exactly as he made it with a Roux or will a Bechamel sauce (one of the French mother sauces). My dad went to culinary school so he learned to make Mac and Cheese this way right along side how White colleagues. And it does look 🔥.

I’m not a macaroni fan either way, but the way I enjoy mine is in tiny portions, I make the sauce, make the noodles/pasta of my choice, then cover them with cheese and put them in the oven. And I’ve learned to put small portions in the oven so that by the time the cheese is no longer stringy - I’m done eating. 😍 And it’s real cheese this time. I think it adds a little sweetness but probably nothing to noticeable since its a small amount. Ive never used that type just the regular condensed milk and add my own sugar to taste. I think it just enhances the cheese flavor. Some of my family makes mac and cheese with sugar in it, so this reminds me of that.

As someone who does like a sweeter Mac n cheese sauce occasionally, I can tell you for a 9x13 you're gonna have to use nearly a whole can to be able to really taste sweetness, and it's still not overtly so (especially if you got heavy cream and sour cream and flavorful cheeses going in there) I don't like yams but I imagine a sweeter cheese sauce gives the same effect as the mac n cheese/yams touching moment on the Thanksgiving plate 😅
Its the unsweetened condensed milk that you use for this, such as evaporated or pet milk. I use a whole can of evaporated milk but I make two full size casseroles of macaroni when I cook. I also add 2% milk. I use all kinds of cheese especially mixed blends packs as well as extra sharp. Sharp, white sharp cheddar, ColbyJack, not pepper but monterrey....etc I have never added flour or sugar to my macaroni. Having all these different cheeses harmonize is rich enough for me. I do take a browni pan sized portion to turn into jalapeño mac and cheese for my mom. I don't even think I saw him use salt and pepper but maybe he used it while making the sauce in the skillet.

Havarti, Munster, sharp cheddar, mild cheddar and sometimes Colby or Gouda. The havarti and munster are for the creaminess, they have no flavor of their own except being buttery. The cheddar amounts depends on which flavor you want to be stronger...... I can tell some of y'all put sugar on everything 😜
