Cubans call that Panza and we make it with Chick Peas and some times with cow or pigs feet. They also call it Pata y Panza. Its loaded with Collagen and super nutritious. Awesome recipe brother.

Today I used a little tripe, and used beef chunks. My mom always used racaito to all her dishes, including this one, but I am guessing that the sofrito here includes that? Where I live now, recao is hard to come by unless you go to suopermarkets that sell it. I've seen it sold in some stores. I look forward to ordering some pasteles from you! I love ALL your videos :) I visit your videos every time I feel bold enough to make an OLD SCHOOL dish as this one because I never paid enough attention to my mom when she would make it. ME... I was the one who ate ALL the Spanish dishes but never actually learned to make them. Well, not really but for these dishes, yea I just wanted to eat them instead lol. ANY HOW... Today I am REALLY going to attempt to make it. I have a sick Aunt (due to covid) the after affects :( and she loves this soup, me too and well I am going to try my best to make this and hope and pray that it comes out scrumptious lol. I get this all the time at Tu Casa Restaurant here in orlando and it is fantastic but they do it straight up without the extras. Im dying to try your version cuz it looks more hearty. Thats the way i love my soups/ stews. Also imma cook the tripe in a pressure cooker to save time

Wow, my father used to make this and add pig feet, it was always a party on Sundays when all the family would gather and the music be blasting and the kids be running wild. I would be filling up coffee cups with boiled milk for café con leche. Thanks for bringing back great memories. Gonna gather up my ingredients to make this on a Sunday at my house for the family and now grandchildren. God bless you.

Neither the green peas. But hey, I guess you modified it to fit the other cultures. Remember this: authentic puertorican food in PR, "never" gets modified to please other cultures. We have a unique flavor. Anywho, congrats, there are many of your recipes that honor the boricua flavors. 💙❤🤍
I cook mine in a slow cooker on low/medium at about midnight🤣😂...by morning it is tender. Before the low cooker I cut it up...boiled it for about half hour...then I drain it.... then when I place it in slow cooker I add the seasonings. No veggies in slow cooker overnight🤦🏽♀️🤣 In the morning it’s ready.

I think if u invested in a pressure cooker it would cut ur cooking time in half & the tripe would b extremely soft in 45min 🤷♀️Just a suggestion ⁉️
Pressure cooker is good in a pinch but affects the texture of meats.
Always go slow and low on tough meats if you can

Why do you serve rice with soup? Wouldnt that be more like a stew? The soup already has potatos.
