They sorta updated mineshafts, if they're exposed then the wooden paths are held up with chains and have wood pillars underneath them. That's probably why they haven't done more to them (it would be cool if they did though, or somehow made the wood biome specific like villages)
Yea the update should have updated the mineshafts dungeons and the strongholds and the wild update should have added a new mineshaft that Leads to the entire way to the deep dark city and it should be infected with sculk and when the archaeology update comes they should have little digsites underground and little camps in caves full of mineing equipment
