its kinda like a snowflake because the larger a structure an enderman builds the more surface area the structure has and thus the more likely they are to place more blocks on that structure, so they kinda build semi crystal structures.
and also they probably build caves because enderman teleport away from rain and sunlight so they all teleported into underground caves and slowly expanded them.
I was making map art over a desert. I would be there for hour and hours daily. Its built in the air, about 40-50 blocks. Mobs would contstantly spawn below it and after a long time i noticed that the ground below is completely changed, because enderman have been changing it. When you brought up the desert i was going: "Yes yes good idea!" out loud, nice video thanks for making it!
Turns out endermen are just like humans and given creativity and time will build a dong. And a lot of endermen with a lot of time will build a lot of dongs.

It would be so cool if we found out that Mojang made the Endermans actually build a secret structure if they had enough blocks and time to do so, but no one just cared enough about them for us to find out.
Viewers probably expected a normal distribution shaped hill to form like in the thumbnail, but it didn't. This is because instead of randomly walking across the map which would have resulted in a normal distribution, the endermen teleported to their placing locations, with each block in the chunk having equal probability.

I don't have a perfect visual but I thought about the premise of the Blame! manga and how the builders lost control and just started building increasingly surreal installments to the city the whole story is set in until the even Jupiter itself gets swallowed up.
You should absolutely check out the short story Anvil by Wen Spencer. It's in the World Breakers anthology and has a similar premise as what you just described. It isn't an official Minecraft book but it's set in a dimension based on Minecraft with endermen esc beings. Also the protagonist is a sentient talking tank.

This is why I use a datapack that stops endermen from picking up blocks. Whenever I AFK an area for 10 hours, the endermen leave the terrain looking like swiss cheese. Honestly it's the only datapack I have installed that changes the vanilla gameplay and I'm considering getting rid of it.
Endermen are my favorite mobs and this just furthered that. Imagine seeing a Dimension like this on the other side of the ancient city portal. Enderman Team forever!

Its... just perlin noise. The final result looks like a noise bmp, which is what minecraft uses to generate its world. Thats fascinating.

Minecraft's ai determines where to walk to based on height, so while I don't think it'd make a normal distribution, it'd make an interesting pattern
