This really took me back to when I was Mia's age and cooking with my mom. Thank you two cuties for giving an old woman a very heartwarming flashback.

I've made these about 6 times now, and they've come out amazing every time!! After the first try, I've made a double batch each time so we can freeze some, they're so good!
For anyone interested: Lately I'm using half brown & half white sugar and love how moist they come out. I've also tried with rosemary because we didn't have Thyme on hand, I've tried subbing 1/4 of the flower for protein powder so they'd be a more filling breakfast option, as well as baking them in our Ninja air fry oven, and with pre-frozen (but thawed prior to mixing in) shredded zucchini. All of these methods still turned out great, as did the originally written recipe!

Made these muffins yesterday and brought them to wok. I added mini chocolate chips and used 1 tsp of ground thyme as I didn’t have fresh ones. My coworkers loved them!! Thank you, Laura.

I made these! Lovely! So delicious, so moist! I thought that adding the thyme sounded a bit unusual, outside my usual palette for muffins anyway. So happy to have found you and this recipe! I happened to have used avocado oil, and also added most of the zest right to the muffin batter. YUM 😋

I cannot wait to try this recipe with fresh thyme! Sounds divine! I have an awesome lemon zuchinni bread recipe which calls for a very lemon glaze with zest. I put it on while the loaf is warm, cover, and refrigerate. The resulting density and flavor is amazing... but I love variations and trying new things.
I have a ton of eggplant, which is how I found your channel. Any eggplant recipes you have would be awesome! My first zuchinni plant was a fail after 3 zukes, but I planted 3 more in the ground that are already putting some zukes on. I will try this recipe later when the bounty comes in.

Just made the muffins, DELISH! A real treat. I will make them again for sure, love the flavor combo. I will decrease the sugar though and skip the topping, to make them an everyday breakfast item rather then just an occasional treat.
