My head cannon is Jesse's Hololive persona in this game would be a Butterfly Girl with abilities named something like History Buff , "LADIES!!!!", "Game Producer". The weapon of the butterfly girl would be a soundwaves representing his VA, YT, and Podcast work. The Ultimate summons a giant space butterfly and drops merch like bombs, I am thinking Frankenstein Joe T-shirts, beer glasses, and other stuff from over the years as little references.

The Orange Dragon Lady from holoforce is legit my favorite thing in the world She has inspired me so much and pulled me away from my deepest dark times Shes no longer in hololive, however she is still a legend, doing legendary things!
She lore-wise takes her viewers' fingers as tax to stay on her stream(?). And sometimes, she gives them back at the end of the stream. I'm not entirely sure why. But I'm in for it. Lol.

For some reason, that evolved into her claiming to take away her viewers' fingers so they can't click away from her stream, then giving the fingers back when she's done. EDIT: Korone has an eccentric aesthetic sense and also loves watching gory movies. So maybe that's why she went with taking fingers.
The Hololive girls very rarely do collabs with other V-Tubers from other agencies or irl celebrities and tv shows. Virtually never with actual in-the-flesh online content creators unrelated to V-Tubing. The V-Tubers of agencies HQ'ed in Japan, especially Hololive, are treated like idols, which is a whole other can of worms in of itself. In short, it results in collabs being so strict, cause in idol culture, collabing can be career-ending by their own fans if they collab with the wrong person. I consider the notion that Hololive talents rarely collabs with people outside their company to be somewhat half true, when you consider the amount of times the talents joins any VCR events and especially so with how frequent HoloID likes to collab with others outside of Hololive. I think it’s really depends on each talents, it just seems like they rarely do it, but that’s probably because most of them are just shy or just not interested in doing so. Not saying that the company don’t have any say in it tho, I’m sure that there is at least a sort of blacklist filled with people who would be a brand risk if the girls collabed with them.
The Hololive girls do a lot of collabs with non V-Tubers but it's usually radio shows or special event appearances on TV shows but those outside of Japan seldom see them because they don't get translated into english. The biggest exception is Suisei's radio show, where her most dedicated clip channel goes out of the way to translate some highlights from the radio show she hosts alongside a popular Voice Actress. A lot of the time they invite an extra guest, usually it being another V-Tuber that's somehow connected to either Hololive or Suisei herself. Hololive has also done multiple TV shows with comedians or TV hosts so they aren't restricted to just off-the-air segments. Then you also have unique situations like Mori Calliope showing up for a Trash Taste podcast episode that's hosted by Gigguk (Garnt Maneetapho), The Anime Man (Joey Bizinger) and CdawgVA (Connor Colquhoun). You're completely right however that the biggest issue Hololive has is the type of some of the fans they end up having are very aligned with the traditional idol culture you find in both Korea and Japan with KPOP and JPOP idol groups. This means that it's rather easy for a rather innocent event to trigger an outrage that both the company and the talents then have to deal with.
