  • I made a nice easter dinner on a budget for only $16. This might be the easiest meal I've ever made. I'll be shopping for cheap easter food to include in my dinner and then I'll be doing a little decorating to set the mood. Hope you like this video. Happy Easter friends.

    INGREDIENTS
    HAM steak 5.06
    potatoes 3.19
    asparagus 2.34
    yellow cake 0.79
    frozen blueberries 1.25 (DOLLAR TREE)
    fresh raspberries 2.86
    lemon 0.68
    TOTAL 16.17
    HAM STEAKS
    brown in pan, then remove from pan and wash out pan. Add brown sugar and butter to clean pan to make a glaze. Simmer until bubbly then coat the pieces of ham.
    Asparagus
    Trim ends, then top with olive oil ( or whatever oil you have) and garlic salt. Bake at 400 for 5-10 minutes or until desired consistency. I forgot to time mine, but I think it was about 10 minutes. Serve with lemon wedges. Squeeze over asparagus right before eating.

    I always buy a whole ham. After you can cut into lots of portions for other meals. the bone can be used for a soup. Ham is great to have as just the “meat” of a hot meal, as the meat in a salad, for meat in a sandwich… smaller pieces can be used for casseroles/ scallops potatoes/etc. As long as you portion it out and freeze it, it can last a VERY long time. You don’t need a ton of ham in a bean soup, omelette, or cold pasta salad but it can lots of flavor.
    My preference is a spiral ham as it’s so much easier to portion out.
    I have gotten 15 portions for a family of 4 out of a ham.
    ( * Hams/turkeys will go on sale after holidays… it’s a great way to bulk up your freezer. )

    My Walmart has precooked pre-seasoned spiral ham 2 lbs for $5. All you have to do is warm it up. It’s enough to feed 4 people. I’m going to do that this year for one of our gatherings. As always, a beautiful meal! Ty

      Kroger’s has spiral cut ham for .89 lb. Ham avg cost is $8-10 a ham Tuesday last day.

      That's a great deal. The best deal our Walmart has is $1.88 per pound but it's a larger portion size that costs $18.80. Most of the Easter sales are happening this week though.

    I laughed out loud when you speculated on paying for golf time and then just spending the whole time running around in a golf cart. 😂 That sounds like a great idea !

    What a beautiful meal! Loved all your choices. Although you gave yourself a small budget, there was nothing ‘cheap’ about this meal. Festive, and I’ll bet very tasty.     My family has been making a similar dessert since I was about 5 which is for 60 years! We made it smaller and used pie filling and a small jiffy box mix and about 5 to 6 T of butter on top. It was always good and super special back then! I think this is all great ideas for people who are limited as so many are today!

      My family does a version of this. Combine one cake box mix with 1/2 cup oil and 3 eggs. Fold in one can of pie filling. Bake at 350 degrees for 30 minutes or until toothpick comes out clean.
      We love spice cake with apple pie filling, lemon cake with blueberry pie filling, and vanilla cake with cherry pie filling.

    I'm making a bunch of things i have on hand . ....corn beef and veggies,pasta and meatballs.Breakfast:french toast,sausage,egg scramble,coffee.Angel food cake,warmed frozen berries,spray whip cream....and my family is the main attraction!Happy Easter!Happy Spring!🐇🐣🌷☔💧

    You are really inspiring. I don't do these kinds of elaborate setups...but honestly yours only looks elaboate and is actually pretty simple. I'm usually a "fix your plate in the kitchen and sit at thebplain table" kinda gal lol...but I might just try something nice soon.

    oh yeah. I definitely understand the golf cart.
    One of my older co-workers loves golf, when I went with him for the first time it began to rain really hard with quite a lot of find so he decided that we should go back.
    I got to drive the thing and floored it (well as much as you can floor that little thing) , must have been a sight. A 27 year old full-tilt charging over any puddles in the way with a smile ear to ear.
    Each time I get invited I am the designated driver since.

    My mom used to make an inexpensive fridge tart when we were kids. Graham cracker and butter crust, whipped can on ideal milk mixed with a packet of flavoured jello (usually raspberry). Whip the ideal milk and jello power for about 7min, poured over biscuit crust and let set in the fridge until firm. Best made the night before.

    I am always happy when you post a video! I never concentrated on presentation and you have an eye for it. So pretty! ( and inspiring)
    I know it’s basic but sometimes I like to make a yellow cake and just add whip cream and berries on top . Aldi even carries a coconut whip cream in the can.
    I live alone now so I don’t have to buy a ham. I just make lentil loaf ( which is so good leftover in a sandwich just like traditional meat loaf). Have a wonderful day!😀☀️

      Hi Stace 😁 Thank you so much 🥰 ALDI was sold out of that coconut whipped cream. I got a shot of it, but it was edited out because I was trying to make this video shorter. I think that would have been great with the cake. I'm glad you mentioned regular yellow cake with the whip cream and berries. That would have been visually stunning AND delicious!
      The lentil loaf sounds more to my liking. I've never made one. Just googled and found some recipes- just added to my bucket list. Thanks for the idea.

      @O Soniye I use Veganisita lentil loaf recipe. I modify all recipes ( sometimes to my detriment) lentil loaf is delicious but can be crumbly. I’m a bit careful with it and wait to slice it until it cools. I’ve thought about using the ingredients and putting in muffin tin to have individual servings.

    Our local Meijer has spiral hams with a glaze packet for 89 cents a lb this week. You would have leftover ham for your budget the following week.

    That is a beautiful meal. Everything looked delicious, too. Seeing you fry the ham steaks made me hungry for Red Eye gravy. Don't know how it got it's name, but it's your basic pan gravy using the pan after ham steaks but you use coffee instead of milk. Delicious with biscuits. Thank you for the wonderful ideas.     I know I once wrote this before. Buy your dollar tree stores that you shop at are so pristine and so organized.
    I have been to many when I was in Florida that looked like it was in a hurricane or WW3. They only have one staff at 😮the cash register checking people out and there is not one worker in sight on the floor if you need to ask a question. In this case I leave. I don’t even bother staying to shop. How lucky you are to have such a beautiful store to shop in.

    That date syrup has one ingredient: dates! We use it for many things- same for date sugar(only ingredient is dates!). My procrastination paid off at Aldi yesterday… I went to grab a ham steak for my sometimes meat eating adult kids but found that the Easter hams were on clearance. I got a $19 ham for $7! They will have lots of leftovers to take home.

    It’s so funny Michelle! When you brought out the second centerpiece I was literally yelling “ add the tulips to that centerpiece! Bend the stems! “ and then you did. Great video.. Dump cakes are my go to dessert, but you need more fruit….Two large cans of peaches with a cake mix and a stick of butter makes the most perfect peach cobbler, But I’ve also used a whole different kinds of canned fruit from the dollar tree to make the cakes and they almost always turn out delicious especially pineapple and mango.. I really think it needs the butter, but I just use one stick.

      Hi Wendie 😁 Yay! I'm glad we have the same taste in decor. 😂 I had to add in an additional square of the green foam so that the other floral picks would gain some height- since I was able to create it without cutting my tulips this was a win for me.

      @@ArdentMichelle I drain one of the two cans so it’s still pretty juicy which makes some of the parts of the topping more Cakey than others… and I can of crushed pineapple is really good in there too but I grew up with a mother that believe that everything was good with a can of crushed pineapple in it I think pineapple was such a treat when she was little and growing up with nothing, I often joke that canned pineapple was the basis of my mom’s cuisine, So it’s very nostalgic for me… She put canned pineapple and sweet potatoes she put canned pineapple and sweet-and-sour meatballs she serve pineapple and cottage cheese as a salad ..she was all about the pineapple, So I have made the dump cake with one large can of pineapple chunks and one large can of crushed pineapple and added a little coconut on the top and man it was delicious

    To glaze my ham, I combine brown sugar, syrup, and apricot preserves. Heat through, top the ham, then place under the broiler.

      @ArdentMichelle the dessert would be nice in a loaf pan. Cooked, cooled, sliced & add sugar glaze (sugar/water & a bit of vanilla) if you have too much cake mix....make muffins for guest to take home.

    We use cherry pie filling and pineapple for our dump cake. It's tasty but not the prettiest. Whip cream does make it better.

    Budget friendly desserts are chocolate pie from 2 boxes of pudding milk and graham cracker crust shell. Remember to take half a cup of milk out the recipe to make a stiffer pie when cold. Also Watergate salad is 2 cans.pineapple, 2 boxes sugar free pistachio pudding, 1 sugar free whipped cream and as amnay marshmallows as you like. Stir the juice from both cans of pineapple into pudding mix, toss the fruit, fold in whipped cream and then marshmallows. Chill 3 hrs.

    Great video! Loved your decor and thrifty tips. Your attention to detail makes for a lovely presentation without breaking the budget. I always use the olive brine to add to recipes like your appetizer. Doing so means big olive flavor without spending more. I wonder what your toaster oven dried tomatoes would be like in the appetizer.?? Also wondering if using the individual dessert cups would have been more to your liking in hindsight.     Hello, AM. I always enjoy your budget holiday meals, but this one really takes the cake (no pun intended)! Your intro was beautiful! I hope you and your family also have a blessed Easter. (P.S. Walmart sells Betty Crocker instant potatoes - in a pouch - for $1.08. We like the creamy butter variety. They are very simple to prepare, taste delicious, and easily feed four people.)

    Hi Michelle, I wanted to add that I have IBS, therefore I have to live with a low FODMAP diet. The appetizer you served looks delicious and appears can easily be served low FODMAP. I am able to eat sourdough bread, and all of the other ingredients are considered low FODMAP..

      Hi Dana 😁 Understood. I've been reading a bit about that diet. I have lots of viewers with food intolerances so I'm always trying to make a variety so there are choices for everyone. I'm so glad you can alter the cheese dip to suit your dietary needs.
      I've been thinking that the congee that I make would be great as a staple for those with IBS. Plus it can be customized in so many ways for variety.

    I got a big butt portion Smithfield ham for free with points. I made scalloped potatoes, roasted asparagus and Bisquik biscuits. Boiled 6 eggs for a dozen deviled eggs. My big splurge was a homemade cheesecake for dessert, but even that wasn’t too expensive.
    Since the ham was free and I already had Bisquik I think I spent under $20 and fed 10 people.

    I can't believe the price of groceries lately, but especially potatoes!! I used to be able to get a 3 lb bag at the 99 Cents Only Store for $2, now Walmart Neighborhood Market is selling a bag of potatoes for $4.79. I get stunned now when I go to the grocery store. I've been living off bananas and PB&J sandwiches for a while now. My union's monthly food bank has become a necessity.

    I have done the dump cake where you mix the cake mix with 2 little apple sauce cups and it comes out soooo good. And you pour it over the fruit. Its yummy

    I don't recommend substituting oil for the butter in dump cake unless it's to satisfy dietary restrictions. The milk solids are important for producing that crumb crust on top of the cake.
