  • I've had some requests to include more meat and poultry in a weekly budget challenge video. I planned my menu around one of the most popular cooking light recipes of all time - a honey glazed barbecue spiced chicken dish. I'm also going to make pozole verde, a recipe that has been on my bucket list for awhile, along with a hearty Mexican cornbread casserole.

    Corn pancake with egg, black beans, avocado, diced tomato, and cilantro
    ½ toasted bagel with avocado and everything but the bagel seasoning and half banana

    If you are doing this with 2 people it will be 2 ½ bagels per person, 5 eggs each person

    1 carrot- I'll make a sesame dressing for a salad today
    cilantro - and it is still in good shape. lol.

    over half of the jar of honey
    This meal plan was based on 2 people at $25 per person so I had some of their portion left over.

    I used 1 1/2 cups lentils with 1 potato- This made 6 servings
    Taco seasoning

    *omit or adjust red pepper flakes to your desired level of spice
    Pozole Verde - Made 6 servings
    1 teaspoon Mexican oregano
    4 cloves garlic
    ½ onion
    2 bay leaves
    4 tomatillos
    7 chicken thighs - ( I used 5 but 7 were available)
    1 large can Mexican hominy
    cabbage
    jalapeno
    avocado
    radishes
    cilantro
    chicken bouillon
    1/2 onion
    1 bunch of spinach
    boil chicken with tomatillos, onion, garlic, bay leaves, and oregano.
    pick out chicken to separate bowl and shred. take out gristle. Take out tomatillos, onion, garlic and put in blender. Add a little broth or water to the blender. Discard bay leaves. Roast and peel skin from chili. add to blender along with cilantro and 2 cups of spinach. Blend. Cook in new pan for 20 minutes. Add this to broth in larger pan, add in hominy and cook for 25 minutes. Add in shredded chicken and then serve. Top with prepared toppings.

    This is an impressive budget for two people esp including meat. It would come out to about $200/ month which might not be extreme for some people but is still very reasonable! Its also nice when you expand the budget sometimes because we tend to see more variety. As always love your thoughtful videos!

These past few days I've been thinking of what constitutes an "extreme budget", and I think I've decided on a max of $15 per person per week. I'm glad you liked this video.     Hi Michelle! Loved the idea of cornbread pancakes. I have no oven so I'll definitely try that soon. Small tip though as a Mexican American whose star dish is pozole verde. The flavor of the tomatillos is so much better if you get some char on them first, blend, then simmer. Same with the garlic and onion. Besides that we don't use spinach in pozole verde. The green color mostly comes for Pasilla/poblano chiles and Anaheim chiles that are also toasted, blended, and simmered. And the copious amount of cilantro in it. But you're definitely right simmering is key. I make mine with a whole chicken so I can get a rich broth and let it simmer for a few hours. The longer the better. Not letting the chicken boil also keeps it super tender.

      Hi Rachel 😁 Yeah I was thinking I needed more char on those tomatillos. I remember feeling like I had a lot going on in this video 😂 I got the idea of spinach from pozole verde of two Mexican cooks that I love to watch, Cooking con Claudia and Simply Mama. I loved this pozole so much. I definitely want it to be a regular in my house. I'll try it with your tips next time. Thanks for the feedback👍

    I was talking out loud "I hope she recommends using the thighs only for that honey BBQ" and of course you did. Can also recommend the popular honey garlic chicken crockpot dish that is all over Pinterest - thighs only - it is so yummy and there's lots of sauce for your rice. That lentil soup is going on my must make list AM, thank you again!

      😂 I'm with you on that. This recipe definitely works best with thighs. I did mention at the end that a person could try drumsticks (to save money ) but would need to experiment with the cooking method. As is this recipe is so easy with the thighs.     I make a mixture of mayonnaise and salsa as a sour cream substitute. I cannot eat dairy so I find the mixture to provide a nice level of creamy and tart. I usually mix at ~2 parts mayo to 3 parts salsa (the store brand mild salsa).

      Try mayo with lime juice, cumin, and either Chipotle powder or paprika. It's a great DF but creamy Mexican sauce that we always grew up eating on fish tacos.

    I love lentil soup. I also love cabbage. I am mostly whole food plant based. The chicken is a no for me. There are lots of substitutions though. I love tofu. Some plant based chicken options are okay as well. Thank you for the ideas. I really enjoy your channel. 😊

    The "you can leave some small things out" part reminded me of a old uni friend.
    he was as he said "as much a cook as a med student", he was a structural engineer on bridge focus.
    but he was an engineer so he had a fitting cookbook that he collected from wherever he could.
    was basically laid out like this:
    ingredient/substitue1,substitue2...etc
    ingerdient/ sub 1, sub2(good with sub 1 of line 1)
    it was madness but somehow worked, and the same dish was never samey.

      Yes I've had it. I agree that it's delicious. 👍 It's weird though because I always forget about hominy. I was eating the pozole and wondering why I don't eat hominy more 😂 I enjoyed that soup a lot. It's going in my rotation.

      Hi Debbie 😁 Glad you liked some of my meals enough to try. One of my viewers talked about a Mexican casserole her mom used to make that was similar but only had one layer of cornbread. I'm wondering how this would turn out with only 1 box of the cornbread. It might be a little lighter. It was quite substantial as is and made 8 big hearty servings.

    Happy Thanksgiving, Michelle! My mom made the Mexican cornbread casserole for me when I was a kid but she put the cornbread mixture on top of the meat mixture. Maybe next time I make it, I will try putting the meat mixture in the middle

    We used to make what we called tamale pie what you called Mexican corn bread casserole. We used cabbage to top but it was marinated like a vinegar coleslaw.
    Here the texmex version of passole has tripe in it like menudo and I don't care for that texture. I think the version you made sounds more to my taste.

      Hello 😁 Vinegar coleslaw sounds good. I love cabbage and want to start eating it more frequently. You could always use chicken breast for the pozole. Just make sure not to overcook it. You might like that best.

    Tomatillo newbie question: When I have purchased tomatillos in the past, the papery husk doesn't peel off nearly as easily as it did in this video. Does that mean the tomatillos aren't ripe, or am I doing something wrong?

      Hello 😁 Yes I believe that means they aren't ripe yet. Look for the ones where the husks are opening.

    1st of all… love watching your videos! I never miss a video. I was wondering if you’d be able to make a week of budget meals from organic, non-organic clean dozens, and other clean ingredients? (Clean dozens are produce items that don’t need to be organic.) I do my best to eat this way, but I waste too much food and money.

    I am making that lentil soup tonight! I have everything except the carrot. Crazy idea but what do you think about some dried cranberries for a little sweetness versus adding sugar?

      What about the lentil soup? Also, lots of vegetarians make the posole, they just don't add the chicken. It's really a delicious soup with lots of great veggies.
