- Today we make delicious short ribs while boondocking in our 2021 Winnebago Solis 59PX hardtop. No inverter in our Solis. no problem! We confirm our Jackery Explorer 1000 1002Wh power station has more than enough power to cook short ribs in a 3 Quart Instant Pot. And it even had enough power left to reheat pre-made mash potatoes in our Sabot Heat.

Dawn, thanks for watching our videos. It was great to discover that we can make more than burgers, steak, and pizza while camping. Home made meals are so conforting while on the road.
