- Muffins are described as individual serving cup of quick breads which uses baking powder and or baking soda instead of yeast for leavening. They are usually lower in fat and sugar compared to cupcakes which are sweeter and richer. Muffins are more dense than cupcakes but should be moist inside. They have the characteristic dome shaped top due to high heat used during baking. Some muffins are topped with streusel before baking or dusted with confectioner's sugar after baking. They are best as a breakfast pastry or eaten with coffee than as a dessert.
I am sharing with you different variations of the muffin using the basic muffin recipe. Please feel free to try and experiment with other flavors.

Hi chef...can I use all “all purpose flour” instead of half cake flour? And if I want to make it double chocolate, how many cups of cocoa powder am I going to use? Thank you so much and God Bless...
To answer your questions -
1. I used a combination of all purpose and cake flour to make the muffins soft crumbed but with a dome on top. You can use all purpose flour only but expect the muffins to be dense.
2. To make chocolate muffins, you might need to find another recipe because you will have to make several changes to the flour, fat, sugar, liquid and leavening agent to make it chocolate muffins since this recipe was formulated for regular muffins. Cocoa is bitter so it needs more sugar. Cocoa is a drier so you need to adjust the water or liquid and oil in the recipe. Cocoa powder is acidic so it needs a different proportion of leavening agent. Knowing these facts, feel free to experiment. Good luck!

i would like to add carrots, crushed pineapple, raisins, I am assuming that i only use 2/3 cups of milk, is that right? what about if i use buttermilk, how much shall i add? just to avoid the milk and vinegar combination. I thank you so much for featuring this easy method.
Yes use only 2/3 cup buttermilk

Chef, i tried the muffin and it was really yummy and the one i’m looking for. I followed the recipe properly and the cooking time but i still have burnt muffin bottom. What is wrong with it? I am using the same muffin molder like yours. Thank you for your reply.
If the bottom is burnt, it means your muffin pan is too close to the heat source. I usually bake on the middle rack of the oven. Thank you!

You need to adjust the flour, sugar, oil/butter and liquid too. It means you need a different recipe to make them into chocolate muffins.

Maybe sobra measurement mo nang liquid. Do not over mix. Please check the recipe and try again.

No need. I bar 225 grams butter is 1 cup. So if you need 2/3 cup, just cut 2/3 of 1 bar butter. If you are not sure, you can melt before measuring too.

I have not tried adding ube haleya. Yes. I am sure that it will affect the consistency of the batter. You might not get a good peak on the muffins if you alter the proportion of the ingredients.

Yes you can but you need 1/8 cup less per cup all purpose flour to replace it with cake flour.

Yes you can but you need to adjust the flour because canned blueberries are watery. And add it last and swirl only like 4 times so that the bater/mixture does not turn gray.

Chef pa share how to fold the muffin liner pls... 🥰
Cut a square of parchment paper about 7”x7” and put it in a muffin pan. Put a glass on top that has the same diameter as the muffin pan. You will be able to naturally form the muffin liner. Btw, I bought mine. It is called a tulip muffin liner.

Not for this recipe Ma’am. Rolled oats in the mixture will take up a lot of the liquid so you need to adjust the proportion of your ingredients. Normally, oats are just used as topping and not mixed with the batter. Thank you for watching!

If you followed my recipe, my guess is ang oven mo ang may problema. You should lower the temperature a bit and bake it a little longer. You might also have over filled your oven. You should always give space for the heat to go circulate. Do not put the muffins too close to the walls of the oven because they tend to burn and dry up faster. Hope my answers helped.

I use a different recipe for my Milk and Cheese Muffins which you can search in our Caro and Marie FB page. However, if you use the Chocolate Chip Muffin recipe, you can omit the chocolate chips and add in 1/4 cup full cream powdered milk, 1/8 cup more milk and 1/2 cup grated cheddar cheese. I honestly have not made this version yet since I have another recipe but you can give this a try. Thank you for watching.

So sorry ma'am. I give out measurements in cups because majority still use these for measuring. They have not moved to the metric system yet. In the meantime, you can just measure them in cups and then weigh them to get their measurements in weights. Thank you for watching!
