      That's called gochujang, red pepper paste. Gochujang is s a savory, sweet and spicy condiment paste made from red hot chili peppers, glutinous rice, fermented soybeans, salt, and more. Thank you for the kind words!

    How do you cook the spinach and bean sprouts?

      Thanks for the good question! Put bean sprouts in boiling water and cook for about 2-3 minutes. Rinse the cooked bean sprouts in cold water. Then, put spinach in the water where bean sprouts were cooked, and cook for about 1 minute. Rinse the cooked spinach in cold water and squeeze out the water with your hands. For the bean sprouts, mix 2 pinches of salt, 1 tablespoon of sesame oil, a half tablespoon of sesame seeds, and a little bit of minced garlic. Mix well until the seasoning is evenly distributed. This makes a simple bean sprout salad. For the cooked spinach, squeeze out the water and cut it into pieces about two times. Mix 2 pinches of salt, 1 tablespoon of sesame oil, a half tablespoon of sesame seeds, and 1 teaspoon of minced garlic with the spinach. Mix well until the seasoning is evenly distributed.     Any recommendations on gochujang/gochugaru/spice replacement?
    I'm so sad, my tcm practitioner told me I can't eat any kind of chilli anymore 😭

      I'm sorry to hear that you need to avoid chili. I'm not sure about how to replace gochujang. However, gochugaru can be replaced with paprika powder. Thank you!

      I think the advantage of bibimbap is that you put your favorite ingredients and mix them together. It's okay to mix it with only vegetables without meat.       That's a good question! I used Korean white (short grain) rice. Uncooked short grain rice is the kind of rice Koreans use for all their meals. It's stickier than long grain rice. Thank you!
