my main issue with caramel corn is that i can't get the popcorn evenly covered. i tried your oven trick tonight & it didn't make much of a difference. i think when i initially pour the caramel i should try harder to coat the popcorn as evenly as i can? i have a lot of large caramel globs that just don't want to melt in the oven. (i am not using your recipe but i'll try it. mine is also brown sugar based but has no corn syrup.)
It is easier to distribute and keeps the popcorn from getting soggy. This is the best/easiest way I've found to do it, but if you have enough room in your pan you could try adding the popcorn to the pan if you'd like. :)
Corn syrup is completely optional. The receipe I've always followed & must I've seen don't use it. Just the salted butter, brown sugar, baking soda & vanishes Vanilla extract. As much as i love my receipe, trying to find a recipe that doesn't require as much butter
I made the caramel didn't work.i melted the butter then put in the sugar and let it boil, but after stirring for 3minutes I can see oil separate from sugar.

Substitute for corn syrup - golden syrup. You can make it easily at home and it's dirt cheap.

How long do you think this lasts after making it? I'm thinking about making and packing it up for little gifts.
As long as it's in an air tight container it should be good for 1-2 weeks. :)

Wouldn’t it be easier to add the popcorn to the pan of caramel and stir rather than adding the caramel to the popcorn?

Corn syrup just works best here. It is not the same thing as high fructose corn syrup.
