From Salmon roe to Caviar Part 2

  • Part 2 shows the 2 step process of adding Salt in the salmon roe and curing it, salting it, to make delicious salmon caviar, or Ikura. This method just uses the Salt directly. There are other ways, such as using brine, or soysauce. The entire process takes about 90 min.

    I used your video to make my first salmon caviar. It turned out delicious ! I did use a little less salt than you did. Thanks for posting this.

    Hey folks, NEVER use cold water for making caviar (IKRA), because as the eggs touch the cold water they become so hard like ping-pong balls (not tender), use warm or hot (not boiling) water only. Also make salty brine (1 liter of hot water (165"F) and at least 3 table spoons of Kosher (coarse) salt. In brine you can easily adjust the salt content. Hold the eggs in brine 10 min. then dry it with strainer and paper towel. After that put caviar in glass jar and add a little vegetable oil (but not an olive). That's it, you can enjoy the caviar for 4-5 month. Yummy!!! :)

    Nice explanation for those of us who haven't seen or tried any thing like this. I have recently become curious after buying tiny eggs on my take out sushi. Your video gave a good look at the size of the eggs and made me really want to try some.

    Just so you know, you can freeze the caviar for up to a year :) Just make sure to keep it deep in the freezer, not on the freezer door :)

    Ok now I know what to make with all my salmon eggs/roe. I have caught about 30 King/Coho salmon this season and I usually use the eggs for crab bait so after seeing your vid. I'm going to try your method thanks !

    Did he pick that spoon out of that sink? Yes he did! His sink is probably cleaner than yours you Germaphobe. And they cure un-refrigerated meat in salt. Salt kills bad bacteria.

    salt is the cure if your roe turns opaque when you are rinsing it.

    This isn't a big deal. It's all covered in salty water as he states. Water mixed with table salt. Table salt is iodized. Iodine is a disinfectant. Good thing you picked up on this. Step Yo Game Up

      You can also use sea salt, anything that doesn't contain iodine.

    waste o money. use sea salt. kosher is cheap and usually sea salt derivitive. pickling salt is just a waste and not as healthy as sea salt.

      It depends on which kind of eggs you use. Salmon eggs or red orange, beluga or sturgeon eggs are black.

    i dunno my bathrooms gross as fuck, but id cook dinner in my mothers. maybe his sink is clean as fuck. mine isnt. i wouldnt do that without a courtesy rinse or if i know ive put shady shit in the sink, like raw meat aside from fish, i wouldnt dare.
