But now I'm craving a carbonara, from looking at your presentation I think it is named Mysterious Bolognese because the ragú or bolognese sauce is hidden under the shapely pasta on top🤐
in italy we also make ragu' simply without adding the tomato passata, its called white ragu so it could be inspired by that dish also like you said this one looks more like an Alfredo carbonara lol
names of dishes are use based on the consistency and use of food. the same is with vegan meat. it's not meat, but it's used in the same way. so u can call something bolognese even if there's no tomatoes. it's not about ingredients but utility.

Con la sal japonesa no sé si referirá a una llamada Moshio, un tipo de sal marina que se colecta usando alga seca, lo que le agrega un poco de sabor a la sal! The original dish does look like a regular bolognese. Lisa's signature dish is a variation on the red flaming red bolognese dish.
