RECIPE:
Sweet & Savory Toast (Serves many)
INGREDIENTS:
1 loaf bread
For the mermaid toast:
1 block cream cheese, softened
1 teaspoon strawberry jelly
1 teaspoon grape jelly
¼ teaspoon matcha powder
1 tablespoon powdered sugar
Red food coloring (optional)
Blue food coloring (optional)
Fresh fruit for decoration
For the savory omelette toast:
1 egg per person, beaten
½ red bell pepper, diced
¼ onion, diced
¼ cup cured ham, diced
1 cup shredded cheese
1 stick butter
Salt and pepper
2-3” Cookie cutters
DIRECTIONS:
Make the mermaid toast:
Divide the softened cream cheese in four bowls. Add the strawberry jelly to one bowl with cream cheese to make a pink mixture, adding one drop of red food coloring if desired. Add the grape jelly to the second bowl to make a purple mixture, adding one drop of blue food coloring if desired. Add the matcha and powdered sugar to the third bowl to make a green mixture. Leave the fourth bowl of cream cheese white.
Toast the bread to your liking. Add small spoonfuls of each color randomly on the toast. Use a knife to spread the mixture over the toast and to blend the colors together. Decorate as you like with fresh fruit.
Make the savory omelette toast:
Use a cookie cutter to cut a hole in the center of a slice of bread. Prepare one slice of bread per person. Set aside.
Heat a small frying pan over medium heat with a little bit of butter. Cook the onion, bell pepper and ham until tender about five minutes. Season with salt and pepper. Remove from heat and set aside.
Add 1 tablespoon of butter to a large pan over medium heat. Add the slice of bread with a hole in it. Place a spoonful of the ham mixture in the hole. Cover with a generous pinch of shredded cheese. Pour the beaten egg over the cheese. Allow to cook for 3 minutes, checking periodically that the bread isn’t burning. Use a large spatula to carefully flip the bread over. Cook for another two minutes. Add the cut-out piece of bread to the pan and toast slightly. Serve hot.

About Christy Carlson Romano:
Christy has been a working actress and singer since she was 6 years old. She moved to Los Angeles with her mother when she was 14 to star in the Disney Channel franchise, Even Stevens as Ren Stevens alongside Shia LaBeouf. Christy enjoyed many years with Disney gaining an Emmy nomination for her voice work as Kim Possible and starring on Broadway in Beauty and the Beast. She went on to balance her college career at Barnard College, Columbia University with filming movies for ABC Family including: ‘Campus Confidential’, ‘Taking Five’, ‘The Cutting Edge 2: Going for the Gold’, and ‘The Cutting Edge 3: Chasing the Dream’. Christy returned to Broadway in her mid twenties and learned to puppeteer in the Tony-Award winning ‘Avenue Q’. Christy was married to her husband on New Years Eve , 2013 in Banff, Canada after having met in a screenwriting class in college. She became impassioned with directing and made her debut in Lionsgate’s “Christmas All Over Again”. While she still works as an actress, she enjoys living in Orange County with her husband, Brendan Rooney, and daughters, Isabella and Sophia.

Even Stevens was one of my favorite shows! It truly showed a different side to a family that wasn’t “picture perfect” and showed what it’s TRULY like to have siblings. Ren and Louis described the relationship between me and my sister and I related to that as a child. Now my 11 year old son watches it every night on UA-cam with me. It brings back such good memories! I miss the old Disney shows! Nothing compares to it! Love your channel Christy! Thank you for being such an inspiration to this day for me!! ❤️❤️
