Try a vodka version instead of brandy, likely going to taste better
Don’t throw away the rind you took off the top! You can cut it into pieces and add it to soups and stews while cooking (remove before serving) and it adds a TON of wonderful umami flavour to the dish!
AND you can store it more or less indefinitely in the freezer in a ziplock bag!
You can also eat it. It’s delicious! If you cut it thin and microwave it can be like a Cheez-It. When you add it to a sauce and simmer for 30 min or more you can eat it straight.

@@sullivanwagner1996 it was fairly good form but it was still a lot of weight he wasn't used to lifting that way.
I did my back in at 26. Didn’t break it, but herniated several discs, & ruptured a disc, and had to have the entire ruptured disc removed. I feel like we don’t appreciate our back, or being able to do whatever we want pain free until we fck it up.

I was thinking grappa would work too. It’s not barrel aged like cognac or brandy either.
I‘ve worked in an Italian restaurant and we also had a huge wheel of cheese there. But we only took a little bit of hot water and scraped some cheese of the wheel, kind of „mashed“ the cheese with the water in the wheel and then dumped the pasta into it. No alcohol whatsoever.
You should try it that way, it’s reallyyyy tasty

I had this once it is quite boozy, They did add a heavy cream sauce afterward but the main flavor was creme and brandy. Not a bad combination but... you can do it far simpler than this. I did learn brandy works well with pasta though, I did not think it would pair that well but they do.
I've had it, too, from a restaurant! My partner and I both had it and agreed it was noticeably boozy. It was balanced with the other flavors (I don't recall cream, but it's possible there was. It was creamy and cheesy and boozy), but the booze flavor did not cook out entirely enough that it didn't still taste like alcohol to a noticeable degree. I didn't particularly like it, and neither did he.
I remember that accident of you almost burn your face doing flaming pasta in previous video 3 years ago, hope that doesn't repeat itself 😅

@@danielverdiesen3631 there are many reasons. Back when they first started, they let just anyone sign up to be a therapist. It’s was a huge controversy but they “corrected it” but even now their therapist are very sketchy. (Ofc not all of them) but I’ve seen videos of people having their therapist driving, cooking and doing other stuff when they pick up the call, and even in some situations not even knowing what a certain mental illness is and spent the whole time with their client just looking it up online. Also, they funded the IDF. Many more reasons , so it’s kind of just a “pick out poison” kinda situation, many reasons to dislike them

@@danielverdiesen3631 there are many reason. I recons you do your own research but here are a few examples: when they first started, they basically just let anyone be a therapist, licensed or not. Now they claim to have changed that but still have a lot of very unprofessional people working for them. I’ve heard and see examples of therapists from BetterHelp pick up the call for a clients appointment while driving, cooking or even shopping. There is one person who posted their experience with Better Help where they had to correct the therapist the whole time cause they didn’t know anything about this persons mental issues and spent the whole appointment googling stuff. Another reason I don’t like them as they support the IDF. So it’s honestly just a “pick your poison” kinda situation

Hey man, you should try using a smaller amount of brandy and a brandy with a higher proof (alc percentage). Alcohol in cooking in instances like this and vodka sauce are meant to add a kind of “tartness” and not lend the flavour of the alcohol itself.
You can potentially use spiced over proof brandy that is heavy on aromatics, but then you’re adding notes of those spices to your dish for sure.
Will take a bit of trial and error as most recipes do. But I’m sure you’ll master it in no time!
