You,sir....are a hero! I have been so frustrated making mozzarella with renant. I almost gave up. Then I tried your recipe today and it's PIZZA NIGHT! Thank you so much. This melts amazingly and has wonderful pull.
@M Foster nope. I did not. I make paner cheese with vinegar as well. You are essential rinsing it out when you push the liquid out. I like lemon juice too.
Same here! My first try was a very small curd. The second try it never made curd, it just kinda separated into a cloud. It’s so frustrating when you follow step by step and it doesn’t happen!
Vinegar, lemon juice, lime juice, Apple cider vinegar, even a balsamic vinegar if you wanted to. But you get additional flavors. Distilled white vinegar is the least flavorful.

@@andregobi9285 I didn't add any salt to the milk (I will try next time because it really needed salt) To the warm salty water, I used more than for pasta but it was only in there 30 seconds or so. It set up super well and I was able to slice it and pull it apart like the real deal. Made a killer pizza!
@@andregobi9285 Good luck I think you'll be happily surprised. I only lucked out by finding raw milk at a local farm the day after watching the vid. I did 2 liters and about a half cup of vinegar (maybe a bit less) and the curds were in seconds. Reply and let me know how it works out for you.
Me too, yet I gave up making my mozzarella cheese at home, Alas, after spending a lot of money and time and almost messing up the kitchen to get a small portion of cheese ! I found out that buying Mozzarella is cheaper than making it.

This came just in time. Aldis Italian mozzarella was 45 p just a couple months ago. Now 65 p. It all adds up So now while I'm waiting for the dough to rise and the fire to heat up the oven i can make the mozzarella. Fantastico

I love the simplicity and elegance of this recipe, but I have to say I was really taken with how well filmed this is. My compliments to your camera man and whoever edited this. Especially the parts in close-up where you're shaping the cheese with your hands strike me as particularly beautiful--and then the final product is so perfect. I'm not sure where I can get unpasturized milk (it has never come up before, even though I have made my own cheese a couple of times), but I can guarantee you I'll find out soon! I can't wait to try this!

Wow - I am definitely going to try this recipe. I don't have the patience to scoop all the whey out. I would just pour the entire pot into the sieve and discard the liquid before proceeding.
Was just watching an old kitchen nightmares where they made fresh mozzarella but didn't explain it aside from it being quick and easy, now this comes up for me and answers all my questions.
Y'know... when I make a pizza I make my crust from scratch and sometimes I cure my own meats, I grow my own herbs and vegetables when I live somewhere that I can... I guess I need to start making my own mozz, given how easy it is! Then I can be truely proud of my pizzawork. Though I'll never have a pizza oven, probably. Maybe one day, if I'm lucky!
@@newleft2254 I think if you are using a home oven then you should get steel slabs instead of stone. Steel heats up faster and radiates that heat to the pizza faster. Since home oven cannot do to really high temperatures like the real wood fire ovens, stone is not the most efficient way and the heat just isn't enough.

That's because rennet is [digestive juice] from stomach of cow. So it is why most cheese from Europe countries is not ok for me (veg.) and for Muslims. But most cheese, big multinational brands, is made with "microbial rennet"...you could google it, maybe find out how it is made. Otherwise maybe the curdling process can be started with lemon juice or tamarind, or maybe just the natural process ike buttermilk / sour milk / ...
My mom makes cottage cheese at home and uses a muslin (cotton) cloth to drain the liquid by wrapping the curd in a ball and twisting the top into a knot. The more you twist, the more water drips out. It's really satisfying to watch haha.

We make this in India all the time, except we don’t put it in hot water with salt. It’s called paneer, it’s delicious. A cheesecloth makes it easier to strain,
Paneer is more like Feta cheese, the consistency. But feta is very salty, normally/usually kept in brine (salt water.) And feta is made from goat milk. But Mozzarella melts, that's why it's the basic cheese for pizza. ...And so it works well for grilled cheese / toasted cheese sandwiches. Paneer is not. What is the same is that they are unfermented.

Yeh well one can kind of make some the info sort of similar.. with pasteurized milk.. sadly a lot of milk here in the states is ultra pasteurized.. good because it extends shelf life.. but not so good for cheese.. Ironically some powederd milk seems to actually work better.. tricky part is getting the timing and temps right.. also got to really have hands able to hold and mold the hot curd.. one cannot express that's a big part to stretch it.. :) it may not quite be a proper mozerella.. However it's melts nice and can be quite tasty..
very interesting ... how do you keep the mozarella (apart from 'in the fridge' 😄) ? bathing in some liquid like in the grocery shops ? if so, is that only water ?
I gotta say that inmy opinion making Mozzarella is one of the most difficult cheeses to pull off (no pun intended) Both the acidity and the temperature are critical but this video makes it seem so easy. I am planning on making some this weekend, though raw milk here is not easy to find but I hope that fresh pasteurized milk with some added calcium chloride to repair the damage to the proteins the heat causes will make this a winner.
Been making some home made pizzas for a bit now, with baking powder admittedly, and I love this, now I can make margherita from scratch with home grown tomatoes and paprika (I like the spiciness in the sauce) using homemade cheese instead in a couple of minutes, 10/10
Depending on how wet/dry I happen to make the dough (I'm eyeballing everything very roughtly) when it's wet it's great, when it's dryer it turns out closer to frozen pizza, both in taste and texture, which is alright
@@ThatDruidDude usually I like to do a 60% hydration dough and let it rise in the fridge for 1-2 days, comes out crisp and well risen with great flavour

It also works with pasteurized or even UHT milk. You might need to add a little more vinegar, and don't get as good as a result as with raw milk, but it still works.

I agree with you but it sure would be nice to make fresh mozzarella without having to fight a cheese cloth. I have the worst luck with them. I'm sure if I bought better cheese cloths that wouldn't be a problem so I'm probably my own worst enemy in that regard...lol.
@@LordSmyrnian I used the cheapest cheesecloth. Twist it tight then put it on a plate with a heavy book or weight on top. Leave it for a couple of hours then unwrap it. Done.
Fabulous! I used to make fresh cheese from goat milk using a brown liquid rennet and cooking the curd long enough for it to become pretty solid. Then pressing the curd lump overnight how nice to know this easy and quick way to make your own mozzarella ! I had no idea!

I am making this recipe right now, but I noticed you said 20 ml of white vinegar, but you also said 1/4 cup. According to my measuring cups, 1/4 cup is equal to 60 ml, not 20 ml. When I used the 20 ml, it wasn't enough to separate all the curd from the whey. I used the 1/4 cup/60 ml, and it got everything separated. Now, I have to strain it. Wish me luck!

If anyone cares, you can use lemon juice instead of vinegar. It's mainly the acid that is needed, not for the taste.

To the warm salty water, I used more than for pasta but it was only in there 30 seconds or so. It set up super well and I was able to slice it and pull it apart like the real deal. Made a killer pizza!

@@andregobi9285 Good luck I think you'll be happily surprised. I only lucked out by finding raw milk at a local farm the day after watching the vid. I did 2 liters and about a half cup of vinegar (maybe a bit less) and the curds were in seconds.

Me too, yet I gave up making my mozzarella cheese at home, Alas, after spending a lot of money and time and almost messing up the kitchen to get a small portion of cheese ! I found out that buying Mozzarella is cheaper than making it.

I love the simplicity and elegance of this recipe, but I have to say I was really taken with how well filmed this is. My compliments to your camera man and whoever edited this. Especially the parts in close-up where you're shaping the cheese with your hands strike me as particularly beautiful--and then the final product is so perfect. I'm not sure where I can get unpasturized milk (it has never come up before, even though I have made my own cheese a couple of times), but I can guarantee you I'll find out soon! Y'know... when I make a pizza I make my crust from scratch and sometimes I cure my own meats, I grow my own herbs and vegetables when I live somewhere that I can... I guess I need to start making my own mozz, given how easy it is! Then I can be truely proud of my pizzawork. Though I'll never have a pizza oven, probably. Maybe one day, if I'm lucky!
You can buy a few stone slabs and put them in your oven to make stone-baked pizza! My friend does it and it really does make a huge difference!
But a stone pan to bake on and buy red clay bricks for the racks above and below.
Get a pizza stone, bake it at 525 F.

@@newleft2254 I think if you are using a home oven then you should get steel slabs instead of stone. Steel heats up faster and radiates that heat to the pizza faster. Since home oven cannot do to really high temperatures like the real wood fire ovens, stone is not the most efficient way and the heat just isn't enough.

That's because rennet is [digestive juice] from stomach of cow. So it is why most cheese from Europe countries is not ok for me (veg.) and for Muslims. But most cheese, big multinational brands, is made with "microbial rennet"...you could google it, maybe find out how it is made. Otherwise maybe the curdling process can be started with lemon juice or tamarind, or maybe just the natural process ike buttermilk / sour milk / ...

My mom makes cottage cheese at home and uses a muslin (cotton) cloth to drain the liquid by wrapping the curd in a ball and twisting the top into a knot. The more you twist, the more water drips out. It's really satisfying to watch haha.

We make this in India all the time, except we don’t put it in hot water with salt. It’s called paneer, it’s delicious.
A cheesecloth makes it easier to strain,
Paneer is more like Feta cheese, the consistency. But feta is very salty, normally/usually kept in brine (salt water.) And feta is made from goat milk.
But Mozzarella melts, that's why it's the basic cheese for pizza. ...And so it works well for grilled cheese / toasted cheese sandwiches. Paneer is not.
What is the same is that they are unfermented.

I live in Canada, one of the few developed nations on earth that outright bans the sale or transport of raw milk…. Fines up to $5000… Ridiculous…

Yeh well one can kind of make some the info sort of similar.. with pasteurized milk.. sadly a lot of milk here in the states is ultra pasteurized.. good because it extends shelf life.. but not so good for cheese.. Ironically some powederd milk seems to actually work better.. tricky part is getting the timing and temps right.. also got to really have hands able to hold and mold the hot curd.. one cannot express that's a big part to stretch it.. :) it may not quite be a proper mozerella.. However it's melts nice and can be quite tasty..
You can use pasteurized milk - but not ultra pasteurized. And it has to be non-homogenized.

I gotta say that inmy opinion making Mozzarella is one of the most difficult cheeses to pull off (no pun intended) Both the acidity and the temperature are critical but this video makes it seem so easy. I am planning on making some this weekend, though raw milk here is not easy to find but I hope that fresh pasteurized milk with some added calcium chloride to repair the damage to the proteins the heat causes will make this a winner.
Been making some home made pizzas for a bit now, with baking powder admittedly, and I love this, now I can make margherita from scratch with home grown tomatoes and paprika (I like the spiciness in the sauce) using homemade cheese instead in a couple of minutes, 10/10

Depending on how wet/dry I happen to make the dough (I'm eyeballing everything very roughtly) when it's wet it's great, when it's dryer it turns out closer to frozen pizza, both in taste and texture, which is alright
Noooo. Make it with yeast. Search for wolfgang puck pizza dough by chef john. Its sooo easy and quick

Finding raw milk is the hard part where I live.
I've read numerous places that it can be made, though less perfectly, with any whole milk. I'll be trying it with store bought goat milk to see.
It also works with pasteurized or even UHT milk. You might need to add a little more vinegar, and don't get as good as a result as with raw milk, but it still works.

I agree with you but it sure would be nice to make fresh mozzarella without having to fight a cheese cloth. I have the worst luck with them. I'm sure if I bought better cheese cloths that wouldn't be a problem so I'm probably my own worst enemy in that regard...lol.
@@LordSmyrnian I used the cheapest cheesecloth. Twist it tight then put it on a plate with a heavy book or weight on top. Leave it for a couple of hours then unwrap it. Done.

Fabulous! I used to make fresh cheese from goat milk using a brown liquid rennet and cooking the curd long enough for it to become pretty solid. Then pressing the curd lump overnight how nice to know this easy and quick way to make your own mozzarella ! I had no idea!

I am making this recipe right now, but I noticed you said 20 ml of white vinegar, but you also said 1/4 cup. According to my measuring cups, 1/4 cup is equal to
60 ml, not 20 ml. When I used the 20 ml, it wasn't enough to separate all the curd from the whey. I used the 1/4 cup/60 ml, and it got everything separated. Now, I have to strain it. Wish me luck!
How much volume of milk is he using 2 liters?
He meant a quarter of his cup...so maybe has an 80ml cup
