If they were aging them in some specific cave with a unique and hard to replicate combination of microflora, then a regional designation would have some merit. But that's not the case for parmesan.

As an Italian, there is nothing here to be angry about: he doesn't pretend to reproduce in his home the authentic Parmigiano as it's made in Italy, but "only" a "parmesan style cheese". So maximum respect for him, who manages to produce homemade cheeses: a very difficult skill that requires a lot of precision.

Hi, Gavin, beside being Italian I am also from the Parma region, and as a young boy I’ve help in a Parmigiano cheese factory. I am very impress with the cheese making process you have shown in the video. In a small scale it represents, right down to the temperatures used, on what is happening in the factory. I cannot understand some of the negative comments you received, some individuals are just idiots. Of course, yours is not THE Parmigiano Reggiano, but so what? You have made a cheese that resembles the original and I am also sure it tastes good. On being precise, the making of Parmigiano cheese is controlled all the way to the actual feed the cattle get and with favoring the evening milking vs morning milking. So again, good job on what you have done, and opinionated people....shame on you.

Just for those who may wonder, the reason for the lower fat content in the milk is because the cheese is matured for a long time. If the milk is too high in fat the fat will become rancid during the maturation process.
I don't think people realize, the more comments complaining about the lack of angry Italian comments, the algorithm just shows you more comments complaining about the lack of Italians.

@@hogasandrei2631 can you explain to me how it is endangered? From my understanding the fact that there are a lot of fakes of something doesn't make it endangered. There are a lot of fake Gucci belts, sunglasses and purses but Gucci is not an endangered brand. Are there actually dairies producing parmigiano regiano that had to shut down production or are close to shutting down, because they can't compete with the fakes? Or am I misunderstanding the word endangered? Do you have a different definition? I understand there are some elaborate fakes that try to imitate DOP parmigiano reggiano and even fake the logos and the identification on the rinds of the cheese, and I can see how this is taking a cut out of the margins of the industry. But I feel like the majority of fake "parmesan" doesnt even compete in the same market. Somebody who buys some inexpensive hard cheese to sprinkle over their pasta is probably not going to buy a +30€ DOP cheese instead for his pasta if the fakes are gone. They'll just use a different cheese. Same for restaurants and frozen food etc. Companies using a cheap cheese instead of a quality one will pick a different cheap cheese if no fakes are available. They are not suddenly going to make their cheap products much more expensive by using an authentic cheese. Maybe I'm wrong. It like to know more about it.

Gavin, I followed your channel several years ago. I made a wheel of your parm, let it age for 30 months. It came out fantastic! I gotta get back to making cheese again.
Get a couple goats, they eat anything so they’re cheap to keep. Just know: they’re escape artists, and can climb things you wouldn’t expect. Also, goat milk cheese is creamier then cow cheese as it has more fats. Just did a google search, apparently it also has less lactate, more protein and more nutrients. Meaning it’s better for y’a and easier to digest.

Its odd how people feel so entitled to ridicule even on such an old video. You dont claim its authentic parmigiano regiano, that youre way is the way they make it in Italy, that you are certified in any way shape or form in the creation of it, or trying to misguide or decieve anyone. I scrolled down the comment section for 10 god damn minutes so you don't have to. From time to time, the meme pops off and the comment section is flooded. Basically most of the angry Italians are mad that the cheese is not from Lombardy or Parma, or that and I quote: "By law must be: no more than 20 hr old cow's skim milk, sale and rennet, nothing more, nothing less" so IT CAN'T LEGALLY BE CALLED parmesan, like it's an insult for you to make cheese that way and call it "Parmesan". Any Italian who slates this guy needs a lesson. In the EU you cannot brand Parmigiano Reggiano unless it it made in that specific region. In the ROTW you can do whatever you want as Parmigiano Reggiano is NOT recognised as a Brand Name legally. PARMESAN is a generic term for 'Parmigiano Reggiano' and as such the maker can call his version PARMESAN. He made it very clear it was 'his version' and so Italians need to grow up.
As a matter of fact, outside of Europe you can't do whatever you want, due to trade agreements. That's why the term Parmesan is used, cause you can't name it Parmigiano Reggiano. Same with blue cheese.

Look I'm Italian and I wanted to leave an angry comment just for the sake of the meme, but this man is so wholesome I cannot bring myself to do it. Also, even if Parmigiano Reggiano is unique and irreplaceable, this man is trying to replicate it at home, I believe this not only takes skills but also knowledge.
But if you buy cheese, make sure to buy Parmigiano Reggiano and not "parmesan cheese" to support an endangered industry that produces one of the most amazing cheeses in the world.

From my understanding the fact that there are a lot of fakes of something doesn't make it endangered.
There are a lot of fake Gucci belts, sunglasses and purses but Gucci is not an endangered brand.
Are there actually dairies producing parmigiano regiano that had to shut down production or are close to shutting down, because they can't compete with the fakes?
Or am I misunderstanding the word endangered? Do you have a different definition?
I understand there are some elaborate fakes that try to imitate DOP parmigiano reggiano and even fake the logos and the identification on the rinds of the cheese, and I can see how this is taking a cut out of the margins of the industry.
But I feel like the majority of fake "parmesan" doesnt even compete in the same market. Somebody who buys some inexpensive hard cheese to sprinkle over their pasta is probably not going to buy a +30€ DOP cheese instead for his pasta if the fakes are gone. They'll just use a different cheese. Same for restaurants and frozen food etc. Companies using a cheap cheese instead of a quality one will pick a different cheap cheese if no fakes are available. They are not suddenly going to make their cheap products much more expensive by using an authentic cheese.
Maybe I'm wrong. It like to know more about it.

Get a couple goats, they eat anything so they’re cheap to keep. Just know: they’re escape artists, and can climb things you wouldn’t expect. Also, goat milk cheese is creamier then cow cheese as it has more fats. Just did a google search, apparently it also has less lactate, more protein and more nutrients. Meaning it’s better for y’a and easier to digest.

Its odd how people feel so entitled to ridicule even on such an old video. You dont claim its authentic parmigiano regiano, that youre way is the way they make it in Italy, that you are certified in any way shape or form in the creation of it, or trying to misguide or decieve anyone. I scrolled down the comment section for 10 god damn minutes so you don't have to. From time to time, the meme pops off and the comment section is flooded. Basically most of the angry Italians are mad that the cheese is not from Lombardy or Parma, or that and I quote: "By law must be: no more than 20 hr old cow's skim milk, sale and rennet, nothing more, nothing less" so IT CAN'T LEGALLY BE CALLED parmesan, like it's an insult for you to make cheese that way and call it "Parmesan".

Any Italian who slates this guy needs a lesson. In the EU you cannot brand Parmigiano Reggiano unless it it made in that specific region. In the ROTW you can do whatever you want as Parmigiano Reggiano is NOT recognised as a Brand Name legally. PARMESAN is a generic term for 'Parmigiano Reggiano' and as such the maker can call his version PARMESAN. He made it very clear it was 'his version' and so Italians need to grow up.
As a matter of fact, outside of Europe you can't do whatever you want, due to trade agreements. That's why the term Parmesan is used, cause you can't name it Parmigiano Reggiano. Same with blue cheese.

2. As the name says Parmigiano Reggiano is from the area around Parma and Reggio Emilia that ARE NOT in Lombardi region. The Region name is Emilia Romagna and Lombardi doesn't mean anythig the Region name is Lombardia and they don't make Parmigiano Reggiano. I'm from Reggio Emilia BTW
