    ・生地
    薄力粉 20 g
    強力粉 20 g
    砂糖  5g
    塩  1.5 g
    水  25cc
    油  8 g
    ・油脂の生地
    薄力粉 30 g
    油  15 g
    ①油脂の生地の材料を混ぜ合わせる。
    冷蔵庫で冷やしておく。
    ②生地の粉類をボウルに計量し、軽く混ぜる。
    ③水と油を入れ全体をよく混ぜる。冷蔵庫で冷やす。
    ④③を大きく延ばし、中央に①を乗せ包む。
    ⑤長方形に延ばして3つ折りを2回繰り返し、生地と油脂の層を作る。
    途中油脂がはみ出てきたら強力粉をかけて抑える。
    ⑥生地を一旦冷やし、好みの厚さに延ばしてパイシート完成。
