If you would like I can share my knowledge with you about how to inspect, test and verify your canning seals and explain what the USDA and FDA wants to see in a seal. I can tell you about how to cut and inspect the seals. Uniformity is very key.
Speed controllers that are suggested below may work, although while I was watching this I was wondering why the motor was spinning so fast. The motor does not need to spin fast. What needs to happen is that motor get geared down for torque and spin at a moderate speed maybe 30-60 rpm. It's like they tried to compensate for not having torque by making it go really fast so when you hit it with the stationary dies it doesn't slow it down too much.
Prepping for a scenario in which electricity is available, in some form. If the prep is for THEOTWAWKI I think non-electric is preferable. 'Course there is the issue of running out of cans...

I may be late to the comments, however, noticing you are doing this on a trestle table. Do you always can your goods on a trestle table? That slight rocking when you engage the rollers may be causing the liquid inside the can to shift up and out of the can whilst it spins? Just a thought.. Might be worthwhile trying on a solid work bench or something? :) Good work nonetheless.
thanks for video man as i saw one fer sale ....An old boy with a lathe can make wheels fer it or buy an old or bench top lathe fer the tool shed n do it your self if needed. that thing needs motor mounted on the side and a 2:1 or 3:1 belt / gear reduction i mean look at speed and torque of induction motors are terrible on startup if using lower parts count direct drive a brushed motor be better i think .may be hack apart the 50 dollar harbor freight drill press fer parts and use to mod if i buy one ;}

I’ve never seen anything like it in my life it’s way more work than just canning with jars and safer I believe. I don’t know any canning that last 10 years other than MRE Linda’s pantry is my go to canning info👍🏼

May I suggest an AC motor speed controller? AKA router speed controller. Variations are priced from $10 to $200. Ebay, Amazon, etc.

The start current on motors can be 7 times normal run current. Need inverter that can take the start current.
can you use any smaller cans at all or is it one size per rmachine
