That very first bone you put underneath, does that needs to exist at all times, including when importing into Unity? Also, does it need any weight painting designated for it specifically? Because I cleared it out since it isn't necessarily a part of any of the mesh. But I can fix that if otherwise. Thank you.
Thank you for asking this question. That bone called root bone. It help to move whole character with IK.Sometimes the character has to be moved back and forward, this task becomes easier with the root bone.
Are you talking about how the sheep switched from gray to having colors? In that case, the person just switched from "Solid" to "Material Preview" and the sheep already had materials for its colors before the video was made. You can look up "How to add materials in Blender" if you want!

No need to all times and no need to weight painting because of it is control of all IK you should put according to your requirement not must.
