A good tip is to substitute half duck fat w/ a neutral oil to add extra richness to the sauce. A guy I worked with would do semi regular hot chicken pop ups and this was his technique.

As a European, if it is a burger or not depends on the bun. If there is a piece chicken in between two burger buns, then it‘s a chicken burger. There is no reason to call Popeye‘s chicken burger a „chicken sandwich“.

maybe you added too much oil at first. start adding oil little by little while mixing it, make sure not to add too much oil and also make sure all of your seasonings are super dry.
