    Thanks Lenny!! I will try to make this tommorrow to bring to my son's and daughter-in-law's Thanksgiving day lunch party. They will be having around 30 people and they will have a whole turkey and ham but i wanted to bring this yummy dish to have more variety. I made a stuffed turkey breast last year but this looks more delicious.

      It is very very tasty Roulade. Turkey brest is not dry at all because of the italian sausage. Hope everyone will enjoy it. Happy Thanksgiving to you and your .

      I did it Lenny and it came out delicious!! thanks again!! I used just regular Itallian sausage without casings.

    This looks like a great alternative to a regular roasted whole turkey. I’m curious why turkey roulade recipes never brine the turkey breast first, like one would for a straightforward roasted turkey breast?

      You can definitely brine it if you want. But since i am using italian sausage turkey brest is not dry at all. The fat from sausage lubricates all brest and it comes out juicy and tender. I think i ll do it again this year for family.
