    We watch & love you "triangles"...talking through long non tic tac tok videos and measuring carefully lol totally adore your relaxed humor, and silliness, your videos are a highlight. Watching you wrap that breast with the bacon says it all...it's how I am when I'm cooking. I'm 45 and I grew up watching you, Julia, and Jacques...the 3 of you were my first inspirations alongside my Grandparents in my world of cooking...love of food...and sharing it all with the people I love. It's amazing to be able to be creative, to experiment, to find joy and passion in doing something that brings people together. It makes a difference in the end result...everyone can taste the passion and love.

    I made this for Christmas instead of the usual turkey. Everyone loved it and will be doing the same next year. Less mess and no turkey to carve.

    You have to love a Master Chef of Jean-Pierre's caliber who doesn't take himself so seriously. His videos are enjoyable and informative, and I learn something new from every video I've watched. This is the best cooking class anyone could ever hope for... thank you Chef! Now if you'll please excuse me... I have to wash my hands!

    Chef JP can release a three hour long video and I will watch it multiple times probably. I am so glad he doesn't edit out his mistakes simply because if an experience chef makes them a homecook will definitely make them. And that turkey looks absolutely mouth watering.

    I made this and as suggested I made it up the night before. This will be how I do it every year from now on!! I did the WHOLE Christmas meal in 1 and 1/2 hours! Unbelievable and it tasted AMAZING! Thanks Chef

    I actually made this yesterday and It was a huge hit with everyone!! Here's a tip that wasn't mentioned in the video: after you lay out your bacon, put it back in the refrigerator so that it stays cold. If you allow it to get down to room temperature like I did. The bacon becomes limp and difficult to work with. Also, mine took about :1:20 to cook. Finally, you may want to turn your ove. Up to 425 for the final 10 minutes and move it to the top rack to get that nice,.golden brown color with the bacon. That being said, the turkey was moist, tender, and absolutely delicious. I'll never cook a whole bird again. Oh..I also rough chopped some garlic cloves and sprinkled them on top of the stuffing before rolling the breast.

    Chef, I made this stuffing and turkey tonight for my mom. My sister and I are visiting her and wanted a Holiday meal. Mom said it was the best turkey and stuffing she has ever had in all of her 79 years. I wanted to send a picture but can't get it uploaded. It was beautiful and turned out exactly as the video!     It's actually really helpful (to me at least) to see things like washing hands, washing the board, and all of that, because that's an important part of cooking.

    What a great recipe and technique! Thanks for keeping all the hand washing in! After I took the ServSafe Manager's Course I drove my wife crazy fixing all the poor health safety techniques we had in our home kitchen. I highly recommend all serious home cooks take a course like that at their community college, you will learn a lot! ... plus I got to know some great Chef's in my community! 😉

    Air fried the quaters, rubbed in butter as per chef's suggestions. Best "left overs" possible with some mashed potatoes and that amazing gravy he taught us. Thx again, JP!!

    I made this stuffed turkey roll how you recommended (the stuffing and gravy). It was absolutely delicious! All my 14 guests loved it. Moist and flavorful turkey breast. I will never cook the whole bird. It’s easy as well. It took me 1 hour and 15 minutes to bake it. Plus beautiful presentation at a table. Thank you chef!

    Remember friends, always shape your turkey in triangle and don't pound the turkey too hard, she don't like it... and ring the channel.
    I speak for everyone when I say we Love you Chef.
    This recipe looks fantastic, can't wait to try it. I got some gravy from the PBS days 17 years ago I will be pulling out the freezer for dinner tonight I need to use up, so I can make the recent blond gravy recipe.

    Chef! I absolutely love this! It's such a clever way to serve turkey! I can't believe all of that food came from just one turkey breast. I love Thanksgiving but it's so easy to over do it. I think this method will help keep portions under control.....rather than out of control. :-) I also love how meticulous you are with cleaning your hands and surfaces. I'm the same way and I use food gloves when working with meat/fish. Thanks chef, these videos have been so fun to watch!

    Thank you for this post, Chef. Lovely!. I have one sitting ready to go into the oven tomorrow, as we celebrate Christmas as much as Thanksgiving. It occurred to me watching this that if you are practiced rolling sushi you will have an easier job with this roast. A big sushi sheet or a bamboo place mat covered in cling film will make this much easier to get tight. My stuffing was dried cornbread with fresh and dried shitakes with garlic, softened in butter and white truffle oil with a generous splash of Chinese rice wine (not cooking wine). I used the water from reconstituting the dried shitake for the stuffing. I added some oysters to the "side" stuffing. Once again, thanks for this, a great presentation. I'll use my own home-cured and smoked juniper berry bacon next time. Didn't have enough for tomorrow. (And yes, everyone should have a boning knife if they can afford it. I filleted my own turkey breast.)
