This is great. I ate a Geno’s when we visited Philly. But the best cheesesteak I ever had was the next day off of a food truck on the great lawn in DC.

We went to Philadelphia 20 years ago and they had the best cheesesteak sandwiches I’ve ever had. I live in Missouri and I have searched for one here that’s just as good. I haven’t found one yet. We had a Cheesesteak Factory open up and I thought they would have a good one because it’s what they specialize in. They actually have the worst ones. Someone telling you what toppings should go on a Philly cheese steak is like someone telling you what toppings you should put on a hamburger. If dry I add mayo, if not I don't. I also like onions, green pepper, and mushrooms. That is my flavor profile.
I put green peppers and mushrooms in them and it’s waaaay better than the OG, of course IMHO. I’ve heard neither Pat’s or Gene’s are very good. Cheese Wiz? Nope, not on my expensive steak! Sometimes with my spicy BBQ sauce or French dip broth. Oh man, good stuff.

A whiz/whit at some places. The "best" cheesesteak is however you want it. I like mine on an Atlantic City hard roll, with white American cheese, mushrooms, and a little mayo if it's too dry.
Well, a friend of mine, who is a well-known Chef, says, "I hate the word Authentic, because if you are talking about Mexican, keep in mind, that they have obviously different recipes between East, Central, West, North and South. Essentially, authentic just means, made with Mexican ingredients, Mexican recipe."

There are so many making the claim "Authentic Philly Cheese steak" and each one is different. But they all start with the same basic build. I think Philadelphia is where the idea originally came from, hence the name "Philly Cheese steak". Thin sliced beef chopped into smaller bits as it cooks. Onions are sliced and added in with the beef. Cheese is added into the cooking. It gets scooped on to a long bread and served. The basic cheese steak first made in Philadelphia, PA. USA.

I could care less what the rules are. I can bet your ass there are no two alike FCS sandwich's in Philly, period. As for me, the bread has a lot do to with the taste and ease of eating. I don't want a bun with so much bread it is the bread that fills you up. I don't want hard bread. And If I want to put bell pepper in it, I will do so. Most of the FCS sandwiches have squeeze cheese. The bread is so key to the experience. It is what contains what you want to eat. It should not dominate the experience/tastes. I don't want a hard bread. You bite into a hard bread and everything in the middle squeezes out on to your lap. Soft bread is worse. It gets soggy and falls apart.

Philadelphia’s cheesesteak is the only source of pride they have. It’s like saying Oregon Potatoes are better while in Idaho. We have nothing else.
They also have the eagles, liberty bell, independence hall, rocky... but the cheesesteak is the most divisive 😂🤣
