The jam came out so good!! Guys add baking soda little by little till you get the desired taste. It neutralises the acid and reduces the sourness and tart for those who don't prefer it ❤

Hi! Everything needs to be hot, from the jars and lids to the jam itself. The hotter the better, so you seal the jam when there's no bacteria or mold in the jar, and it lasts longer. The best way to store it is in a dark, cool place. There is no need to store it in the fridge unless the jar has already been opened. If the jars are properly sterilized, it will last up to a year (and even more).
I made this in the evening and filmed the "thick" part the next morning. So I'd say if you leave it overnight, you'll find it thickened the next morning.

Testing with a cold plate is a really neat trick, never thought of doing that.
Thanks, it's really useful. Hot jam is pretty runny and it's hard to tell when it's ready. With a cold plate it's clear in a couple of seconds.
