      I’m Japanese and I think what you pointed are exactly right.
      To be honest I sometimes think that
      our way of preparing food is rare
      , and maybe you can’t call it hi level cooking. Because what we try not to process or mix too much. And try to push the flavor that the material has.
      So it’s not like inventing a new taste.
      I’m not good at English so maybe my sentence don’t make sense.
      For example, you got good salmon.
      In French cuisine they use blender , mix it up with cream , spices, gelatin ,
      and make salmon flavored liquid.
      Then cool it in the freezer and make a salmon patty. And also prepare the best sauce that will match salmon patty. right? That’s hard work for sure.
      But. Japanese way has almost the opposite mind. Tries to keep the texture and the shape as possible.
      And tries to extract the great taste that the material already has.
      So the other things like seasoning or way you cook is to support the main material.So the material quality like freshness is so important.
      I think the difference came from
      Japan being a island country and isolated. Our food variations were limited. So we worked hard to find the best way of enjoy the material.
      So I sometimes feel we are overrating Japanese cuisine.
      But I’m sure japan is one of the best
      When it comes to preparing the material. You can see it even or beef and of course seafood .
      So maybe japan bringing super high quality material , And let western chef or Chinese chef cook it. will make a great dish

      I've seen plenty of videos of Japanese common where they don't make sure their hands are clean before touching and preparing food.

    This video title made me think of Japanese ekiben for some reason. They are the best. Ekiben are the train lunch sets. They usually have the food from the region you bought it from.

    Time to eat after work or walking around on a good day. Different small and big places to eat in 🇯🇵 besides having great 👍 food enjoyed the the last part somebody was happy with the Jinginsukan and the 🍺. ❤️🇯🇵📹

      My plan is, one luxury meal a day. The rest of the day will be 7/11! I'm most excited about 7/11 because they have great food for cheap!

      Sure, you can do that, but you’ll be missing out on so many good foods. Fresh food (sushi and other meals) are beyond flavorful; it’s an experience that your mouth needs to try.

    Wow!! I really love to eat Japnese food - One of the best in the world - I have tasted Japanese food mostly in Bangkok Really good taste and many reastaurants have been learned from personel in Japan, also some kind of Raw fishes and other food is imported directly from JAPAN.. In Sweden there is not so many well japanese restaurants enough even the demand of Real Japanese is increased here. THANK YOU FOR SHARING wonderful video! Best wishes from STOCKHOLM - SWEDEN

    I miss Uji. Had originally wanted to visit the shop you went to with my family the one day that we dropped by Uji for a look see, but they were closed that day so had to settle for just some desserts at another matcha shop located next to the tourist information center next to Uji river. Hopefully I can be back one day to try the same shop that's recommended to me by a friend

    I always love delicate Japanese food, especially sashimi and sushi. But keep wondering why the chefs don't wear gloves when they handle food to be eaten raw?

      I think that gloves are bad for hygiene because bacteria can enter easily.

      If you want your hands to be hygienic, it is best to wash your bare hands. It is difficult to wash with gloves.

      @@mono77879 Working in labs strictly requires sterile tech in handling materials, we not only wear gloves but also "clean" our hands with gloves on often... Are you sure after washing your bare hands and then touch things around like that is the best way for the sake of hygiene?

      You don't seem to know the history of sushi. They have been cooking with bare hands for hundreds of years, but what problem do you seek to raise with modern knowledge? .Eat sushi at a restaurant run by a Japanese person.

    UA-cam is so mean. I miss japan so much and all that pops up in my feed are videos like this. I want to go back so bad after corona. I just have to study japanese a bit, it was very inconvenient not being able to speaking the language apart from basics.
